Hey matahaji...that's a great question actually. I met a ton of Aussies and Kiwis in the Middle East when I was there opening some restaurants as a Consultant; cooked for many lived with some off and on. Australia is similar to the western US in many ways, so meat and spuds are never a looser. BBQs always go over really well, but there is a sophisticated side to the Australian pallet for sure. You really need to know if they are from the city or a rural area. Urban Australians wouldn't be uncomfortable with anything you find in California wine country. They like international fusion with tons of fresh herbs and complicated techniques. One thing that works for both Australians and New Zealanders whether urban or rural is a good roasted leg of lamb! The Kiwis eat a ton of it and the taste for a good roast seems to be inherited from the British. See my answer about marmite to get a great tip on making an unforgettable lamb pan gravy!
