Chocolate Strawberries
Wash a pint of strawberries, and place on a paper towel to dry (they should be just big enough for 1 or 2 bites) do not remove stems and the little green leaf crown
melt Wilton's chocolate melts!.and dark Chocolate melts work nicely with the strawberries
Hold the strawberries by the crown and dip about 2/3's of the strawberry into the melted chocolate!.
Place on waxed or parchment paper to harden and dry!.
place on serving plate and keep in the refrigerator until needed
( you can make these up to 2 days ahead!. Just make sure they are covered so not to pick up off smells and flavors!.)
You can also dip cherries as long as they are pitted, apple slices , orange slices, or banana chunks (about and inch and a half big)!. but the last three have to be done the same day as you serve them!. Make sure to sprinkle orange juice on the apples so they do not turn brown

Cucumber sandwiches should be made with finely sliced cucumber with the skin peeled off, on thinly sliced white bread and (real) butter!. You can always use cream cheese as well with cucumber with a sprinkling of black pepper!.

Smoked salmon sandwiches on brown bread with butter!.

Egg mayonnaise and cress sandwiches cut into small triangles!.

Ham and English -mustard sandwiches

Sausage rolls and mini pork pies with branston pickle!.

Strawberry shortcake!. This is a butter shortbread with strawberries and cream in between the layers!.

Battenburg cake!.
Dundee cake (rich fruit cake)
Chocolate eclairs!.
Brandy snaps with cream!.

The food can be served buffet style with guests helping themselves!. If the party is being held in the garden, it is preferable to lay the food out indoors where it will be less affected by flies and heat!.

If possible,lay your best tablecloth and have a small vase of flowers( white or pink roses or carnations or freesias ) on the table!. Use doilies to present the cakes on, with pretty napkins for sticky fingers!.If you have some fine family china, or silverware, this is a perfect opportunity to show it off!

This sounds ridiculously easy because it is but it's always a huge hit! Cucumber Bites!. Mix cream cheese with packet of dried Ranch dip seasoning!. Spread generously on pumpernickel bread (you can buy a bag of pre-sliced ones in the bakery section, just make sure it's fresh)!. Ingredients
6-7 lb MEAT FOR Roast 3!.2kg
1 garlic head
1 stick of butter
to taste: salt and pepper - 1 teaspoon each 3 pounds!.
1 onion, sliced
4 slices of bacon

Directions
Salt, pepper, and garlic the meat!.
Place in Dutch Oven!.
Top with onions and butter and bacon
Insert meat thermometer so it is centered in largest muscle!.
Roast oven (325oF) to 160oC as noted on meat thermometer!.
25-35 minutes per pound!.

The gravy is delicious, if you want to make it thicker, just add a tablespoon of oaxtail soup (powder) in 1/4 cup glass of water, add to the gravy, wait to boil!.

scones with cream n jam

INGREDIENTS


2 cups self-raising flour
30g butter, chopped
? cup milk
? cup water
Jam and cream, to serve



METHOD


1!. Preheat oven to very hot, 220C!. Lightly grease a scone tray!.

2!. Sift flour into a large bowl!. Add butter!. Rub in lightly using fingertips!.

3!. Make a well in the centre of flour!. Pour in combined milk and water all at once, reserving about 1 tablespoon!. Using a butter knife, mix quickly to a soft, sticky dough!. Do not over-mix!.

4!. Turn onto a lightly floured surface!. Knead lightly!. Press or roll out to form a round about 2cm thick!. Cut into rounds using a floured 5cm cutter, or into wedges using a floured knife!.

5!. Place close together on prepared tray!. Brush with reserved liquid!. Bake for 12-15 minutes until scones sound hollow when tapped!. Cool scones on a wire rack!. Serve with jam and cream!.

Top tip: any leftover dough can be lightly kneaded and rolled out to make extra scones — these will be harder than the first batch due to the extra handling of the dough!.

Shortbread!. Shortbread is amazingly easy to make and also amazing tasting!
I don't have my personal recipe on hand, but this one seems similar!.

"Shortbread with butter and sugar and flour- a basic butter shortbread recipe!.
Ingredients:

* 1 cup butter, softened
* 1/2 cup granulated sugar
* 2 cups all-purpose flour

Preparation:
Cream butter and sugar until light and fluffy; gradually stir in flour until well blended!. Spread or pat in an ungreased 13x9x2-inch baking pan!. Bake at 300° for 30 to 40 minutes, until just lightly browned!. Remove from oven and immediately pierce all over with a fork!. Cut into bars!. Cool completely before removing from pan!.
