Question: What is an amazing menu for our anniversary dinner!?
My husbands and my anniversary is this coming Tuesday, we have been together for over 7 years and will have been married for 2!. I have Tuesday off so I have all day to prep and cook!. Any ideas for a menu that will blow him away!?Www@FoodAQ@Com

Cornish Game Hen with Wild Rice Stuffing and Strawberry/Honey glaze!.

It's one of the fanciest meals I know how to prepare but my husband loves it!.

2 c!. cooked wild rice
1/2 c!. fresh bread crumbs
1/4 c!. dried cranberries (optional)
1/4 c!. chopped walnuts
1/4 c!. melted butter
3 Tablespoons orange juice

Combine all ingredients!. Place the stuffing in 2 Cornish hens that have been rinsed and dried!. Bake hens in 13"x9" casserole (breast side up) in 350 degree oven for 75 to 90 minutes!. They should be brown!.

During the last 30 minutes baste hens with a mixture of strawberry jelly and honey mixed together!. You can thin this out with a little water if it's too thick to spread around!.

I server this with sauteed fresh green beans!.Www@FoodAQ@Com

STUFFED GRILLED CHICKEN BREASTS

6 split chicken breasts
1/2 lb Italian sausage meat
3 cloves fresh garlic, minced
4 strips hickory or maple flavored bacon, chopped
1/4 lb fresh mushrooms, finely chopped
2 tablespoons butter
1 tablespoon fresh parsley, minced
1/4 teaspoon paprika
1/2 cup bread crumbs
1/8 teaspoon each onion and garlic powder
1 cup sherry
6 bacon strips
salt and pepper, to taste
wooden toothpicks or butcher's string

Sauté the sausage meat with fresh, minced garlic in 1/2 tablespoon olive oil; as the sausage begins to take on color, add the 4 bacon strips and fry til bacon is crisp and sausage is slightly browned, removing meat as it cooks!. Add butter to pan and sauté the mushrooms over medium heat!. Stir in bread crumbs and parsley!. Season with salt, pepper, onion powder, garlic powder and paprika!. Stir together well and pour in sherry to moisten!. Remove from heat and stir in the sausage mixture!.
Preheat grill until it reaches 350°F!.

Split chicken breasts and pound with a meat mallet between sheets of plastic wrap!. Do not make too thin!. Spread sausage and bread crumbs mixture on eachchicken breast, and roll up so that chicken is stuffed on the inside!. Wrap each piece with a strip of bacon and fasten with a wooden toothpick or tie into little bundles with cotton string that has been pre-soaked in water!.

Spray chicken with olive oil spray and sprinkle lightly with garlic powder, paprika and black pepper!.

Prepare grill for cooking over indirect heat, oiling the grates on the side opposite the lit burners so that chicken will not stick!. Place chicken on the side of the grill which is not turned on, but leave the other side of the grill on high!. Close cover on grill and watch temperature; reduce heat to 325°F and continue to grill for about 15 minutes, then turn once and leave for another 15 minutes or so (this depends on the size of the chicken pieces)!.

When chicken is pierced with a fork and juices run clear, it is done!.

If chicken appears dry during cooking, spray or baste as needed with olive oil spray or olive oil, but do not leave the grill cover up for too long or the heat will be lost!.

During the last 15 minutes of cooking, Grilled Potatoes can be put on the hot grill as an excellent accompaniment to this dish

BROCCOLI RICE AND CHEESE CASSEROLE

1 medium onion, finely chopped
2 10oz pkgs of frozen broccoli, cooked and drained
1 stick of butter
2 can cream of chicken soup
6 cups of wild rice
1 clove of garlic
3 cups of shredded cheese, your favorite

Preheat oven to 350°F!.

In a skillet melt the stick of butter!. Sauté onion and garlic, until onions are tender!. Set aside to cool!.

Steam the frozen broccoli until thawed, then drain well!. Let cool!.

Cook wild rice according to directions!. (Use any type of rice desired; wild rice is exceptionally good in this recipe)!.

It is important to allow the warm ingredients to cool before mixing everything together so the cheese doesn't melt too soon!.

When sufficiently cool, reserve 1/2 cup of the cheese and mix remaining ingredients together!. Put in a oven-proof baking dish or casserole dish (or 2 if needed)!.

Spread reserved 1/2 cup of cheese on top!. Cover with foil!.

Bake for 20 minutes, remove foil; bake an additional 5 to 15 minutes, or until cheese on top is hot and bubbly!.

Make approx 12 servings, recipe can be cut in half!.

Grilled Pesto-Stuffed Steaks
Flavor-packed pesto and cheese create the surprise in juicy beef steak!.

Prep Time:35 min
Start to Finish:35 min
Makes:4 servings

2 beef rib-eye steaks, 1 1/2 inches thick (about 2 pounds)
1/4 cup basil pesto
2 tablespoons finely shredded Parmesan cheese
1 tablespoon olive or vegetable oil

1!. Heat coals or gas grill for direct heat!. Make horizontal cut in side of each steak, forming a pocket (do not cut through to opposite side)!.
2!. Mix pesto and cheese; spread evenly on insides of pockets; press pockets closed!. Drizzle oil over beef!.
3!. Cover and grill beef 4 to 5 inches from medium heat 12 to 14 minutes for medium doneness, turning once!. To serve, cut beef into thick strips!.
