Does anyone know of a video activity where someone films guests doing or saying something and then the resulting video is played toward the end of the night? I'd like to do something like that but can't think of the video's subject.

You can show everyone a clip from a traditional Christmas movie like It's A Wonderful Life and then have two people or small teams write their own dialogue to match the actions. Towards the end of the night you can play the video and each team will read their dialogue.
The first thing that came to mind naked twister.....lol
You could have a theme "my new years resolutions before I'm drunk" and then see if they still apply after a few drinks. Or play some adult board games.
here's one from a children's birthday party but it sounds like a blast: put a piece of bubble gum (wrapped is much more difficult than unwrapped) on a plate and then bury it with whipped cream. the first guest to get through the whipped cream, find the gum and blow a bubble wins. here's the catch: they must hold their hands together behind their back ! depending their level of inebriation by that point, the video should be hilarious !
The rope game is the most fun. 4 guys and 4 girls each team , (if there are couples they can not be on the same team) set them up guy girl guy girl. When someone says GO the first person stuffs the rope down the shirt and jeans of the next then the first person runs to the back of the line, if you dont have the rope in your hand and doin the stuffin then your hands are on your head. If your hands move off your head then the judge removes the rope from that person and has to start over. The team that has the rope through wins
I don't know that particular game, however, have you ever been to a "murder mystery" dinner? Loads of fun. Those video games are sold at any games store, games section of walmart, etc. We went to one for new years eve one year, and had the time of our lives.

I still think Charades is an old favorite.........You can also do a Pictionary game.......Buy the big white tablet at Wal-Mart..The team writing on the tablet decides what to draw and the other team has to guess in 5 minutes or less............(you may need an inexpensive easel, unless someone has one to put the paper on)

Here is one that we played in my home many years ago..Always a favorite among friends.......In fact, we played this game for new years !...Have 2 bags placed by the door when guest come in.They place articles in bags..
Every guest has to bring 5 articles of clothing. and 5 accessories like a necklace, etc. For the game,: you will have a row of people of boy, girl, boy, girl. across from another row starting with the opposite sex across from them..
Each row has the articles of clothing.in a big plastic bag.....Now the articles may consist of a blouse, a boot, a coat, a hat, a bra, a thong, a scarf, a necklace, a sock, a pair of sun glasses, a pipe, .........The object of the game is to compete against the row of people across from you......The idea is to see how fast your row can put on an article of clothing or accessory one at a time
while a timer is ticking for 7 minutes....(this is for 7 people in a row).And as soon as you take something pass the bag...
Lets say YOU have on a pair of jeans over your jeans, then the next time it comes to you, you pull out a bra....Put it on..Next time
you may pull out a glove, put it on.....next, you may pull out a boot, (take off shoes) and put it on..last thing you pull out may be a thong, put it on.......The idea is also the first thing you touch in the bag without looking is what you take..(NO peeking).
It is really fun because of the way everyone is starting to look with all the goofy clothing on.........Play b/4 or by 10:00.....Then you have time to laugh and have another drink b/4 the new year..
If a person grabs something too small for them, they still have to try to put it on without tearing it......Have Fun
