Ideas for pot luck dishes 2 serve 25?

I have a Pot Luck Dinner to attend. I need ideas for a quick & easy hearty dish for 25 senior citizens.


Answers:
A whole boneless pork loin will serve 25 people at 1 finger- width slice apiece [mine ,and i have big fingers]
while the roast is cooking;
core and slice apples into rounds. The number of rounds should equal the number of pork slices. I like Macs or Romes for this.
Poach apple slices in a little apple juice until al dente
-Reserve in liquid refrigerated
make a classic cider raisin sauce keep hot
Assembly
Slice pork arrange slices in two long rows in chafing dish while sticking apple slices between the pork slices
gently pour hot sauce into pan
Serve with boiled new or creamer potatoes in parsley butter

It's hard to go wrong with a big ol' batch of lasagna!

Calico Beans, its simple and has alot different items in it.

baked macaroni and cheese & maybe green bean casserole or something of the like.

25 packs of Pringles & a load of dips

Home-made soup always goes down really well. There are many good recipes out there. Personally I love carrot, onion and potato! Yum! Good luck.

Scallop potatoes with onions and perhaps ham chunks in it or on the side are always a hit.
Dessert is also an option.

Cheesy Potatoes

1 bag un-thawed hasbrowns (cube kind)
16 oz sour cream
1 (2 or 3 cups) bag shredded cheese
1 can cream of chicken or celery soup
corn flakes for topping


Put hasbrowns, soup, sour cream, and cheese into mixing bowl. Mix well. Place in 9 x 13 pan, cover, and bake for 50 minuets approx on 350. The last 10 minuets sprinkle corn flakes on top for the added crunch.

This is so quick and easy...it's so good too!

Swedish meatballs
make your own meatballs about the size of nickles, or buy the frozen meatballs not to large. In a pot add 3 cans of Beef Gravy and 3 cans of Tomato Sauce. Add about 1 1/2 cups of water. add Worcestershire sauce, and horseradish and check the taste, salt not too much they are seniors.When meatballs are ready put them in the sauce and cook for about 30 to 45Min's.

Cheesy potato soup

About 8 pounds potatoes, peeled, cut into chunks

1 med to large onion

2 or 3 cloves garlic (to your taste)

medium to large block of cheddar cheese, grated or cut into chunks (grated melts faster)

1 can cream of mushroom soup

1 can cream of chicken soup

1 can cream of celery soup

butter, salt and pepper to taste

Cook potatoes to just fork tender. In a separate pan, saute onions and garlic until onions are clear (be careful, garlic burns easily). Drain about 1/2 the water off the potatoes. Add all the canned soups, butter, salt, pepper, and the grated cheese. Heat till completely blended and cheese is melted. If it's too thick, add some milk to the consistency you want. Should be a fairly thick soup.

You can easily adjust this recipe to make enough for 25. Serve with crackers (my kids like the oyster crackers with this, or cheeseits). And it doesn't have a lot of spices to it so it should be fairly well tolerated by senior citizens.

If you want something with a little more zip, try this:

about 4 pounds ground beef, browned and drained

4 large cans of refried beans

2 jars of salsa (I prefer mild)

about 6 to 8 cups grated cheese

chili powder

sour cream

tortilla chips

Mix browned ground beef, salsa, chili powder to taste and cheese. Heat until cheese is melted. Have the sour cream on the side as a garnish for those who want it. This dip can be made as mild or spicy as you want it, and is very filling.

I have large parties a lot and use to have a catering company,and one side dish that is good for 2-25 is roast potatoes. In large roasting pan toss cut potatoes any size, with washed skins, cut onions(2), cut carrots(10), even yams(4). Toss with olive oil, garlicsalt and pepper.One small bag of potatoes should do it. Roast @350 for about 1 hour or more until golden brown.People love them.And very easy.

Chicken Bog
2 Celery stalks
1 Onion
1 Whole Chicken, washed
5 Garlic Cloves
1 lb. Long Grain White Rice
Salt and Pepper to taste

Chop celery, onion and garlic cloves. Add to large pot on stove with chicken, cover with water and simmer on low until done. Remove chicken from water and set aside to cool. Add rice to water and bring to a boil. Cover and simmer for 20 minutes until rice is done. While rice is cooking, remove chicken from bones. Add chicken to rice when done. Season with salt and pepper to taste. To add more filler to stretch the dish you can add smoked polska kielbasa sausage to water as rice is cooking. Enjoy!

why dont u try something different for a change. how about an indian dish called biryani. its a rice dish with lots of vegetables in it. here's the recipe.

Ingredients :

Basmati Rice 1 cup
Onions medium size 1 No cut lengthwise
Tomatoes Big 1 No cut lengthwise
Carrots 1/4 cup cut into matchsticks
French Beans 1/4 cup cut lengthwise
Peas 1/4 cup
Potato Big 1 No cut lengthwise
Ginger-garlic paste 1 tbsp
Pudina(Fresh Mint) 1/2 of small Bunch
Coriander Leaves 1/2 of small Bunch
Yogurt 1/4 cup
salt & chilli powder Acc to taste.
corriander Powder 1 Tbsp.
lemon Juice 1 Tbsp
Oil 2 Tbsp
Saffron(optional) few strands soaked in warm milk.

Method:
Cook Rice seperately & Cool.
Wash All the veges except Onions & tomatoes.
Marinate the same with Yogurt & ginger-garlic paste
for about an hour.

Heat a fry-pan with Oil , add Onions & fry till translucent.
Add tomatoes, salt & fry till it leaves all the juices.
Add Mint, coriander leaves & cook nicely.

Pour in the marinated mixture,& mix with chili & dhania
Powder.

Cover & cook in low steam till all the veges are tender.
Mix in lemon juice & fry till the moisture is absorbed.
Add Saffron , rice & mix gently .Adjust the seasoning.

Cover & let it sit for a few minutes before serving.

If having an Oven facility Bake the rice in the oven for 30
minuts before serving. Garnish with a few pieces of raisins and fired cashewnuts (optional). Serve hot with plain yogurt.

incase u want to make it a non-veg preparation u can substitute the vegetables with boiled and marinated chicken or lamb pieces too.

the above recipe will serve 6-7 people so u can increase the portions accordingly.
