Any ideas? Something not too time consuming.

What's the deal with potlucks? I'm from the south, we don't have those, err I guess we call them BBQ's. Therefore bring some ribs, who can resist ribs at a BBQ errr potluck?

Spinich Artichoke Dip!

You can put it in a slow-cooker or crockpot and keep it hot all day... great with nachos or bread.


1/4 cup butter
1 (10 ounce) package frozen chopped spinach, partially thawed
1 (14 ounce) can artichoke hearts, drained and chopped
2 (8 ounce) packages cream cheese, softened
2 (16 ounce) containers sour cream
1 cup grated Parmesan cheese
garlic salt to taste

Melt butter in a large saucepan over medium heat. Stir in the spinach and artichoke hearts. Cook until tender, about 5 minutes.

Mix cream cheese and sour cream into the spinach mixture. Stir in Parmesan cheese and garlic salt. Cook, stirring occasionally, until thickened, 10 to 15 minutes. Serve warm.

get some of your leftovers in your frig. and spice them up a little. be creative..

A good salad is always appreciated. They are easy to make & with a little creativity, can be the talk of the luncheon!

Fruit salad is nice.
Cut up nectarines, apples, pears, strawberries, and add fresh blueberries to it. Mix it all up and chill it. You can add sliced bananas, but do this right before the luncheon so they don't turn brown.

cookies, cake, baked mac and cheese, salad, pie etc. buy something from the store and put it in your own cooking ware.

anything quick easy and simple. Usually some type of a green salad is good. Fruit salad is quick and easy, You can always buy fruit platters already made up at the grocery store with pineapples, strawberries, melon, and cantaloupe. A lot of people are health conscience now, and fruit would be the perfect thing. Or bring something to drink, flavored water, soda, whatever....

Lazy day cabbage rolls are good.
take shredded cabbage, cooked ground beef, onions, rice, mix it all together with a can or two of tomato soup complete w/water.. and bake in the oven.

Or a bowl full of iced veggies and dip is good too. carrots, celery, green pepper, broccoli, cauliflower,bok choy, mushrooms, whatever else...

STRAWBERRY JELLO SALAD:
2 (3 ounces) packages Strawberry Flavor Jello
1 cup boiling hot water
2 (10 ounces) packages frozen strawberries
3 Bananas - mashed
1 (16 ounces) can crushed pineapple - drained
1/2 cup walnuts - chopped fine
1 pint (16 ounces) sour cream
Dissolve jello in 1 cup boiling water. Add frozen strawberries to jello. Stir bananas, pineapple and walnuts into jello. Spread half jello mixture in 8"x8" pan. Cool slightly (it sets up quickly). Spread sour cream over cooled jello. Pour remaining jello on top. Refrigerate.

You should ask the host what everyone else is bringing. I always wait til the last minute and then most everything is covered so I get to bring the beer. Hooray, beer!

When I'm in a rush for time for office cover dish lunches, I usually rely on my famous stand-bye = Pea Salad. Take 1 pkg frozen baby peas & thaw in collander in sink. When thawed, place in medium mixing bowl & add 1 sm onion finely dice, 1 pkg finely shredded sharp cheddar, & enough mayo to mix together ( start with 1/2 cup & gradually add as needed ) Place into serving dish & sprinkle with fresh ground pepper & paprika.

BAKED ZITI

SERVES 15 to 20 ON A BUFFET

Sue writes: "I always look forward to potluck dinners. I guess this would be considered a main dish, one of my favorites. It makes enough to feed about 15-20 people on a buffet line. This dish stays fairly warm for a long period of time because of it's size. "

INGREDIENTS

1 pound hamburger
1 pound ground pork or sausage
2 onions, roughly chopped (I like using the sweet ones.)
2 bell peppers, roughly chopped (Use any color you like.)
2 cans (28 ounces each) of chopped tomatoes or tomato puree (Depending on whether you like chunks of tomato or not.)
8 cloves or to taste of crushed garlic
Basil, oregano, parsley (I recommend fresh) or dried to taste
Salt and pepper to taste
Red wine
2 boxes (16 ounces each) of Ziti, with or without ridges, your preference
Olive oil
3 cups of shredded cheese, either Mozzarella or a combination of Italian cheeses
Preheat over to 350° F. In a large bowl combine the first 8 ingredients until just mixed. Transfer to a large skillet and cook until meat is cooked well through. Add red wine if mixture seems a little dry or even just to flavor.

While this is cooking, cook the two boxes of Ziti according to directions on the package and drain; do not rinse. In a large bowl (big enough to accommodate the macaroni as well as the sauce you're making) toss macaroni with about 2 tablespoons of olive oil. When sauce is done add to bowl with macaroni and toss to coat evenly. Place in pan (see note) and sprinkle on all the cheese. Bake, covered with foil, for 1/2 hour if warm, an hour if previously prepared and refrigerated. Uncover and bake for an additional 15 minutes.

Note: I use one of those disposable aluminum turkey pans for this. They're cheap and you don't have to worry about retrieving a dish from a host's house (or washing it) later on.

cut cucumbers, cherry tomatoes, parsley, spring onions and Italian dressing............
veggie plat......baby carrots or carrots, zucchini sticks, celery sticks,mushrooms, baby corn on the cob [in cans] cucumber sticks, cherry tomatoes, artichoke hearts and in center bowl of ranch dressing............
plate of artichoke leaves and bowl of lemon and mayo for dip...........

Quick and easy to make.

cucumbers- sliced
tomatoes- cut in four
olives- cut in half
cheese - cubed
1 bottle of italian dressing

mix all together and enjoy.

Everyone at work loves this salad. I even made it with pasta.
