Finger buffet for 100?!

Question:

Finger buffet for 100?

I,m catering for 100 guests approx at my forthcoming 50th birthday party looking for ideas ., the easier the better

Answers:
I worked for a catering company for years & finger food menus are by far the easiest & most diverse you can serve. Cheese & fruit platters, finger sandwich platters, veggie platter with dip, chicken wings, mini egg rolls, stuffed mushrooms, bacon wrapped shrimp, meat balls, deli platter for mini sandwiches, chips, plenty of crackers & several different types of mustards and other dips.....Make the desserts finger food as well, such as mini cheese cakes, mini tarts, cookies, cupcakes, etc....all are quick, tasty & easy!

It depends on where you live. But i like Ruby Tuesday.. Have them cater. Well hoped i helped

frozen meatballs are awesome/. You can add different sauces and call it gourmet. Just browse the foreign food isl and find something interesing

Also. try lobster ravioli, scallops and bacon are classic.

Costco selld these things called Buffalo Busters/ They are awsome

Does finger buffet mean that you're serving finger food/appetizers?
I think variety is key. Here's what I would do;
Veggies and dip platter
Fruit and dip platter
Chicken Wings platter (any flavour you like)
meat and cheese platter
Dessert platter-a variety of cookies and squares
Allow for 1.5 or 3 pieces per person depending on when the party is. If it's after dinner, 1.5, if it's mid afternoon, 3 or 4 pieces per person because they'll be hungry.

Meat balls, mini wieners, cheese balls with crackers, pita bread loaf--cut a hole in the center and pour spinach dip in the hole saving the pieces you cut out to dip, shrimp cocktail, Ritz crackers spread with cocktail sauce and shredded crab meat, stuffed mushrooms--stuff cooked mushrooms with cream cheese mixed with spinach and Parmesan cheese. Hope I was some help.

There are lots of good suggestions already. If you have no help and you are doing this alone, the best thing would be to get a hold of chick-fil-A and get their platters. My sister gets them sometimes for Christmas when she has a party. They have the chicken bites, wraps, strips, mostly anything they serve. They also have a desert tray. You could get those and then go to Sam's Club or one of the clubs and get things in the frozen section already done and all you have to do is put it on a nice plate or tray. Depends on what you like.

I LOVE enetertaining and doing a buffet for 100 is just my cup of tea. Take Sandra Lee's idea of part from the store and part home-made. I love the pre-made meatballs. If you have GFS near you - they have great ones as well as canned sweet and sour or stroganoff sauces which works well. You can use them in a crock pot or make in oven in big disposible tin pan and transfer to nice serving bowl or platter. They also have boxes of things such as taquitos, etc.

I make ahead and freeze some of the following. Party ryes with these recipes:
Parmesan Onion Canapes
1 c. mayo, 1 c. grated parm., 1.2 c. minced onion, 1 T. milk. Mix well and spread on party ryes.

Ground meat Canapes
1 pound gound beef, 1 pound ground turkey, 1 t. oregano, 1 t. Worcestershire sauce, 1 lb. Velveeta cheese, cubed. Cook and drain meats; add the rest of the ingredients and spead on party ryes.

Here's what I do - I spread the ryes and place on cookie sheet lined with waxed paper. Then I cover with another layer and repeat. I do about 4 layers high, then cover with waxed paper, cover tightly with foil and freeze. When they are frozen solid I remove to zip loc bags until ready to use. Day of party, spread on cookie sheets and broil a minute or two until bubbly and serve! Easy!

Another great one to pre-make and freeze is from Pampered Chef using Wonton wrappers.
Potstickers
2 cans, chunck white chicken, drained and flaked, 2 cans, water chestnuts, drained and chopped, 1 c. green onions chopped (tops and all), 1/2 c. grated carrots, 2 T. soy sauce, beaten egg white, 1/2 c. mayo, 2 cloves garlic minced, 48 wonton wrappers.

Mix all, but wrappers together, place small scoop of filing in middle; brush edges lightly with water, either pinch together in center to form a small pocket or roll up like a cigar and pinch ends. Freeze the same as the party ryes above. Remove to bags when frozen and bake in 400 degree oven for 12 - 15 minutes. Serve with premake sweet and sour sauce and hot mustard sauce.

I always have a shrimp tray. You can buy pre-made but less expensive to buy bags of pre-cooked shrimp and mount in nice glass bowl placed in larger bowl lined with ice. Have some fancy toothpicks and sauce nearby.

For a pretty way to serve fruit kabobs stick the kabob sticks into a head of cabbage. You can order pre-made veggie platters or make your own.

You can buy small rolls at a Pepperidge Farm outlet or buy Hawaiin rolls at Jewel and pre-fill tiny sandwiches with your favorite fillings and freeze.

Since I do not do desserts I would order those from a bakery, check of Sam's or GFS or check with outlet stores.

You can use sterno warmers as caterers do (available at most party stores).Crockpots and warming trays work also.

Also, since the party is for you, maybe ask a good friend or two to bring their specialty. They will be flattered to be asked.
