A good meal idea please?

My friends boyfriend has been visiting her. She lives in the USA and he lives in the UK at the moment. It's his last day and she wants to cook him a lovely meal. He doesn't like seafood and she can go shopping for anything required as long as it is available in a standard supermarket.

What would you suggest to make it special?

A standing rib roast with all the trimmings.

Beef Wellington

1 (6 lb.) whole beef tenderloin roast
Butter
1 (17 1/4 oz.) pkg. frozen puff pastry
1 med. sized onion, minced
1 (8 oz.) pkg. mushrooms, finely chopped
1/2 tsp. dried thyme leaves
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. red wine
1/2 lb. goose or duck liver pate OR 17 oz. can liver pate
1 egg, separated
2 tsp. milk
Bordelaise sauce
Parsley for garnish

(Ask your butcher to trim tenderloin of fat).

(Available at specialty stores).

About 2 hours before serving:

1. Preheat oven to 425 degrees F. In large oven roasting pan on rack, form tenderloin into ring so that thick end rests on thin end to hold securely. Brush beef with 1 tablespoon melted butter.

Insert meat thermometer into center of tenderloin. Roast tenderloin 40 minutes or until thermometer reaches 120 degrees F (very rare). Remove tenderloin from oven and let stand 30 minutes. Do not turn oven off.

2. Thaw pastry as label directs.

3. Meanwhile, in 10 inch skillet over medium-high heat, in 3 tablespoons hot butter, cook onion until tender. Add mushrooms, thyme, salt, and pepper, and cook, stirring occasionally, until all liquid evaporates. Stir in red wine and cook over medium heat until mixture is dry. Remove skillet from heat; cool slightly.

4. On lightly floured surface, with floured rolling pin, roll 1 sheet puff pastry into 14 x 12 inch rectangle. Place puff pastry sheet on ungreased large cookie sheet. Center partially roasted tenderloin ring on dough. With knife, cut pastry with 1 inch border all around tenderloin.

5. Spread pate evenly over tenderloin; top with mushroom mixture. With pastry brush, brush some egg white on pastry around tenderloin. On lightly floured surface, roll second sheet puff pastry as above; place loosely over tenderloin ring, pressing pastry around base of tenderloin to seal; crimp pastry border to make a pretty edge.

6. In cup, with fork, beat egg yolk with milk; brush top and sides of pastry with egg mixture. Bake Beef Wellington 10 minutes; reduce heat to 375 degrees F; bake 20 minutes longer or until crust is golden. With 2 pancake turners, transfer roast to warm platter. Let stand 15 minutes for easier slicing.

7. Prepare Bordelaise Sauce.

8. To serve, garnish with parsley, cut Beef Wellington into wedges. Serve with Bordelaise Sauce.

Makes 10 servings.

BORDELAISE SAUCE:

In heavy 1 quart saucepan over low heat, in 3 tablespoons hot butter, cook 1 tablespoon minced onion until tender. Stir in 3 tablespoons all-purpose flour; cook until lightly browned; add 1 tablespoon chopped parsley, 1/4 teaspoon dried thyme leaves, and 1/8 teaspoon ground black pepper.

Slowly stir in one 10 1/2 ounce can condensed beef broth (bouillon), 1/2 cup red wine, and 1/4 cup water. Increase heat to medium-high; cook mixture, stirring constantly, until sauce boils and thickens.

Something that is foolproof if fajitas - or if feeling a bit more adventurous just add rice to the chicken, peppers, onion mix and you have jambalya!

Stuffed Green and Red Peppers
2 to 3 large red bell peppers, green and/or yellow, or mixed
1/2 small onion, finely chopped
4 ounces 98% lean ground top round
1/2 cup cooked white rice
low sodium salt, (optional)
pepper
1/2 teaspoon Worcestershire sauce
3/8 cup ketchup, or tomato sauce, (optional)

Preheat the oven to 400 degrees F. Cut off the tops of the peppers with a flat cut, going down about an inch, and remove the ribs and pith, and set aside. In a large nonstick skillet, heat the onion and top round in a few teaspoons of water for 5 minutes. Add the rice, salt, if using, pepper and Worcestershire sauce, and stir over the heat for 1 or 2 minutes, until everything is hot. Stuff the mixture into the peppers. Spoon the ketchup or tomato sauce, if using, on top, place the peppers in a baking dish, cover with plastic wrap with a few holes poked in the top and microwave for 10 to 12 minutes, turning once or twice, then bake uncovered for 10 minutes more. Serve hot.

Well I would suggest a macroi casserole it is easy to make and not that expensive and can add other sides dishes as well. Here is the receipe.
1 box of macroi and cheese
ha/f of onion
can of mshroom soup
1 package of cheese
2 tsp of butter
1 cup of milk
Dir.
Cook the macroi and cheese for 10 minutes, then add the milk and cheese package that comes with the macro and cheese . then add the butter and mushroom soup and chopped onions. opitional you can add tuna .
Mix all ingredients together and put it in a corning ware dish. Preheat over to 350 degrees and then after you put all the ingredients in topped it with the shredded cheese and cook for 30 minutes. It is very good and you can add bread or any other vegetable. This is perfect for 2 people I make it alots for my husband and I he really enjoy it. take care

tator tot casserole...sounds simple but you can make it look really fancy.....all you need is tator tots , hamburger meat, and cheese... layer all three stick it in the oven till the cheese is melted and the tator tots are golden, put a special sauce on it ( your choice) and there you go!

beef tacos are always good, its quick and easy they should love it.

1. fillet mignon with or without bernaise sauce-have A1, Heinx 57, and Heinz Ketchup available.
2. Bake potato's with choice of butter, sour cream, chives, shredded mild cheddar cheese, and bacon bits.
3. steamed asparagus topped with hollandaise sauce or parmesan cheese lightly melted(top the asparagus with grated parmesan cheese and microwave for 15-20 seconds) or steamed broccoli topped with cheese sauce or buttered corn on the cobb or green bean casserole.
4. side salad with your favorite dressing topped with croutons and/or bacon bits.
5. texas toast
6. key lime pie or strawberry shortcake
7. ice tea-have lemon, sugar, and sweet and low available
8. coffee available-have cream, sugar, and sweet and low available.

Depends on how good her cooking is!!!

A nice piece of fillet steak is a simple easy one, and topped with a mushroom and blue cheese, with a great side salad is quick and impressive....

Is this a 3 course meal or just dinner??

First I would recommend that you look on kraftfoods.com for something nice to make, they have great cooking ideas.

English men LOVE Spag Bol (Spagetti Bolognaise). Their mothers used to make it for them when they were still in school. Top it off with a Ceasar Salad and a nice bottle of red; she'll have him forever... oh, and don't forget the cheese!

Steak Sandwich

1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound

1/2 t. coarsely ground black pepper

Salt to taste

2-3 T. oil

2 T. chopped onion

4 oz. crimini mushrooms, cleaned and chopped

1/2 t. thyme

1 loaf French or Italian bread, or 1 Vienna loaf

3-4 T. prepared mustard

Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.

Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them

Tomato soup with croutons (or plain bread), rack of lamb with roast potatoes, chocolate mousse for pudding. All accompanied by a good red. I'd also spend some time to create the right atmosphere (perhaps flowers? candles? favourite music?). If she wants to serve a pre-dinner drink, a good idea would be to serve some olives with it. a good dinner is a combination of good food and atmosphere...
