If you can do a crockpot do little smokies in BBQ sauce or sweet and sour meatballs. If not, do a layered taco dip, it has for a base cream cheese (spread out thin) and then you layer whatever you want like refried beans, lettuce, onions, black olives...you can find recipes on allrecipes.com remember to take the nacho chips for dipping.

You can always do a block of cream cheese with either cocktail sauce poured over it or hormel beanless chili or some type of chutney and bring some crackers or chips for dipping.

Here are a few easy things I do that people seem to like.

Baked Brie Cups

--1/3 cup redcurrant jelly or preserves
--2 boxes (2.1-oz each) frozen mini filo cups
--1 8-oz wheel firm Brie, rind trimmed off, cut into 1/2-inch cubes
--1/4 cup coarsely chopped almonds, smoked ones if possible

Put oven rack in middle position and preheat oven to 350. Spoon a little bit of jelly (about 1/2 teaspoon) in the bottom of each cup. Place I cube of Brie in each cup and sprinkle a few of the chopped almonds over. (Once I used hazelnuts instead--that was good too.) Arrange the cups on a parchment-lined (or use lightly greased foil) baking sheet and bake just until the cheese is bubbly, about 15 min. Serve warm or at room temperature.


Sesame Chicken Bites

--1 lb. boneless, skinless chicken breast, cut into 2-inch cubes
--1/4 cup soy sauce or tamari
--2 tablespoons finely chopped fresh ginger
--2 garlic cloves, minced
--1/4 cup hoisin sauce, plus more for dipping
--1/4 cup sesame seeds
--4 scallions, finely chopped

I usually combine everything except the sesame seeds and scallions early in the day and let it marinate in the fridge, because it cuts down on the last minute work. But it only needs to marinate for about 15 minutes if that's your preference.

When you're ready to make them, preheat the oven to 400 and line a baking sheet with lightly-greased foil. Remove the chicken pieces from the marinade and roll each one lightly in the sesame seeds (they don't need to be evenly coated). Arrange them on the foil and roast them about 20 minutes or until just cooked--cut into one to check.

Sprinkle them with the scallions and serve them speared with those silly little frilled toothpicks, with more hoisin sauce for dipping.


Crostini with Mozzarella Pesto Spread

--1 lb. coarsely grated mozzarella, about 2 cups
--1/4 cup prepared pesto, stirred
--1/4 cup finely-chopped drained oil-packed sundried tomatoes

Stir everything together in a bowl until well combined. Slice a baguette into 1/2-inch-thick slices and toast in a 350-degree oven for about 4 minutes or until they've just started to take on a little bit of color. Take them out and, if desired, rub each VERY LIGHTLY with the cut side of a garlic clove. Then spread each with about a heaping teaspoon of the pesto mixture. Return them to the oven for about 4 minutes, just until they're hot and, er, melty.


Ham and Cheese Spread (for crackers or crostini)

--1/2 pound good-quality sliced smoked ham
--1/2 cup shredded Gruyere cheese
--6 tablespoons soft butter
--1 tablespoon Dijon mustard, preferably grainy
--4 cornichons (French tiny pickles), optional--I do not use them
--1/4 teaspoon freshly ground pepper

Finely chop the ham, by hand or in a food processor, and transfer to a bowl. Stir in the remaining ingredients with a spatula until well combined. Chill for half an hour or so to let flavors blend, but serve at room temperature, with crackers and/or crostini.

Another VERY simple last-minute, no-work option is to buy any kind of fully-cooked sausage(s) you like--kielbasa, smoked chicken sausage, an exotically-flavored one, or a combination--slice them into chunks, heat them only for about 5 minutes at 350, then serve them on a platter with small bowls of 2 or 3 different types of mustard in small bowls, with toothpicks for spearing. A little chopped parsley sprinkled over the sausages is a nice touch of color and flavor, if you feel like it.

you can never go wrong with cheese, crackers, and an onion dip. if you want to do something a little more original, try a homemade chili and tostitos scoops

You can make salimie with chesse that comes from a spray can. Just put cheese in the middle and roll up the salime and put a tooth pick in the middle. Hope this helps.

Definitly chips with SPINACH and ARTICHOKE with ASIAGO cheese. Either that or one of those spinach bread bowls.

Something easy that doesn't need to be heated. Maybe make some spiced cashews or a veggie pizza on the crescent dough?

Get a bag of the carrots and celery sticks, and a bag of broccoli flowerettes, and a jar of Roquefort or bleu cheese dressing.

depends on the kind of party it is, but nice cheese (brie, blue cheese etc) and some crackers might be good. Pate is delicious too. If you want to go more casual, get some frozen appetizers you can make in the oven quickly - like little potstickers or quiches.

I usually use ham, green onins, black olives
get creative. Or do mexican style and spread beans sour cream cheese and bring salsa for dip.
Any way after u get all you ingrediants on top, roll them tight and cut into 1/2 inch peices, they are so yummy. or you can but them frozen at sams club they are good too.

Pinwheels (my version):

Flour tortillas

Cream cheese (softened to room temp at least 2 hrs)
Shredded Cheddar Cheese
Can of Chopped Green Chili - or chop up a Jalapeno
Crumbled Bacon Bits
2 Green Onions, chopped finely.
Garlic, salt & pepper to taste.
Mix all well together

Lay tortilla flat and spread a nice helping of the filling all over. Roll up and cut into little pinwheels (don't use the outer edges, you get to eat those little tidbits).

Mini crab cakes.

Sausage Cheese Balls.

1 cup Bisquick
8 oz Jimmy Dean Sausage
2 cups shredded cheese

Mix them together, roll them into balls, and bake for about 10 minutes, or until their brown. The good thing about this recipe is that the ingredients are not set, it's ok if you have more bisquick, or more cheese, etc...just depends on your preference.

It's real good with cheese sauce.

Also, try: Little smokie, with one green bean, wrapped in bacon. (hold together with toothpick) Sprinkle brown sugar on top and bake for 10-15 minutes. You can also add BBQ sauce if desired.

Cheese Quesadillas!

Three ingredients are all you need! I

NGREDIENTS

4 (6 inch) flour tortillas
1/2 cup salsa
2/3 cup shredded Cheddar cheese

DIRECTIONS

Place two tortillas on a greased baking sheet. Top each with salsa, cheese and remaining tortillas. Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

you've got this easy trick:
take sausages, not already cooked (I don't know if you've got them in the US, the knaki ones...) and roll them into puff pastry.
Then, you cut the sausage, put it in an oven, and wait for 10 or 15'.
It's ready to eat..

i used to cater and we started our cocktail parties and banquets with hors d'oeuvres . Crowd favorites were pigs in a blanket, scallions wrapped with bacon, chicken satay, bruschetta, sesame chicken bites, and coconut shrimp.

If going to a party, try to bring something that's a finger food or can be carried around in a napkin or on a small plate that way people can be mobile and keep the flow of conversation.

Whenever I have to bring an appetizer to a party or just don't want to go empty handed I fry about three packages of Hillshire Farm Little Smokies and submerge them into barbecue sauce! It might seem really simple but they taste great and believe me there are never any left over!
- To make it look pretty buy some colored toothpicks so the guests can use instead of a slotted spoon!!
