I need to bring in a dish for a potluck lunch at work. We have 15 employees. Any good but easy ideas?

My favourite recipe (one that I use all the time):
Marinate some chicken wings/drumsticks in chopped garlic and ginger, and soy sauce (add some water otherwise it would be really salty). Then roast with honey. This makes great finger food/starters/picnic food!
This makes a good alternative to sunday roasts aswell - just serve with the usual veg and gravy, it's even tastier!

Fruit salad...easy and healthy

Heavenly Ambrosia

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
2 cans (11 oz. each) mandarin orange segments, drained
1 can (20 oz.) crushed pineapple, drained
3 cups JET-PUFFED Miniature Marshmallows
2 cups BAKER'S ANGEL FLAKE Coconut
1/4 cup toasted PLANTERS Sliced Almonds (optional)



SPREAD whipped topping onto bottom and up side of 2-1/2-quart serving bowl. Refrigerate.
MIX oranges, pineapple, marshmallows and coconut in large bowl. Spoon into bowl lined with whipped topping.
REFRIGERATE at least 1 hour or until ready to serve. Garnish with almonds.

buy some boxes of those little bite size corn dogs. that is a good and easy and cheap idea. merry christmas. or maybe some kfc....( just joking)

1 pot chile. Chop up an onion. Throw that and a pound of ground mince (hamburger) into a thick bottom pot. Brown the hamburger and onions then drain the grease. Rinse a can of kidney beans and throw that in. Add a can of mushrooms with the liquid and a can of diced tomatoes with the liquid. Throw in some garlic powder, chili powder and some oregano. Add a teaspoon of beef bullion powder. Stir, simmer one hour and you're golden. If you've got a crockpot, you can take it to work in a crockpot and let it simmer all morning.

Do a salad tray---large bowl,chop up whatever you like, sprinkle that around the edge-so they can get the salad and mix with the same salad fork.You can package this the night before and just open your zip-loks the day of.Then all you need to go with that is 2 dressings.Easy--everyone likes salad at lunch.

We are having a potluck for our Xmas party at work...Im not a huge cook myself this is what im bringing....Get a pie pan, and make 3 layers...start with cream cheese, your fav salsa, then a mexican shredded cheese on top...and bake!! and dont forget the chips! verryy yummy! good luck and have fun :)

Frozen meatballs, bbq sauce - just pour sauce over meatballs and heat in oven, saucepan or slow cooker.

Cream cheese and salsa dip- take a block of cream cheese, pour a bottle of Pace salsa over it, serve with crackers or tortilla chips

Cocktail weiners- just heat them up with a small jar of grape jelly.

Inexpensive bean dip--large can refried beans, water, taco seasoning or chili powder. Put beans in a large bowl and add water, stirring until it is the consistancy you want. Add spice to taste. Let refrigerate overnight. Serve with chips, cut up celery, peppers or endive.


Taco beef- 2-3 lb beef roast, pack of taco seasoning
Put roast in slow cooker, sprinkle seasoning over meat. Cook on high 4-5 hrs, on low overnight (8-10 hrs). Shred in pot with two forks.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Mexican layer dip-a layer of refried beans, a layer of sour cream, a layer of salsa, a layer of shredded cheese and a few sliced black olives over the top. serve with tortilla chips.

Here is a salad that looks so pretty, taste's so good and is so easy. 1 head of Cauliflower
1 head of Broccoli
1 red onion
1 cucumber
1 green pepper
1 yellow pepper
3 tomatoes
Cut up the cauliflower in pieces (or cut the core out of it and break the flowerette's by hand)
Cut up the broccoli in pieces (first cut most the stalk off)
Cut the red onion in small slices
Half the cucumber and cut in slices
Cut the rest of ingredients any way you want.Sprinkle with salt and pepper.
Then get one bottle of Italian Dressing and pour that over everything and mix. Let set in fridge a few hours or overnight.
Its so pretty to look at and everyone seems to love it. Also you can throw in a few black olives if you like.

Orzo Salad...

Cook Orzo pasta until al dente cool it under cold water.
Add, chopped tomatoes, cucumber, red onion (shrimp or chicken is fine too) Chopped dill Feta cheese (optional)
Add a mustard vinegrette
Yumm!
