Cheese Platter?!

Cheese Platter?

I want to do a cheese platter for around 8 people. Can anyone suggest approx 4/5 cheeses that pair well together and with cured Italian meets?


Answers:
Fresh Mozzerella ( usually in plastic containers in water)

Brie, you can't go wrong with that

Provolone

Asiago (kinda smelly, but delicious)

Gorgonzola (Italian Blue Cheese)

Meats:

Genoa Salami
Sopressatta
Mortadella
Very Thinly Sliced Proscuitto, wrapped around thin slices of canteloupe or honeydew melon.........Oh, and don't forget marinated artichokes and a couple selections of olives to complete it.......

Cheddar, Colby, Swiss, Gouda, Jarlesberg

I would say gouda, an aged swiss, havarti, butterkase, and possibly some gorgonzola crumbles...although this is a more "gourmet" cheese tray...for 8 people you will need about 2-3 pounds total

OUTSTANDING recommendations! I don't know what your taste or price range is.

All the tv chefs recommend having a sheeps milk cheese, cow's milk cheese and having a sampling of mild to sharp cheeses and having them labeled for guests. I would try for a Havarti, Colby cheddar or cojack, possibly a Swiss and for spice a pepper cheese.

You'll want to stick with cheese that won't fade into the backround of the Italian meats.

Try Gouda, Sharp Cheddar, Gruyère, Monterey Jack, and Havarti
