Teriyaki Salmon (you can buy Lawry's sauce or prepare fresh)

Salmon
1/2 cup of Soy Sauce
Garlic ( 2 cloves minced or 1/2 teaspoon powder)
2 tsp Ginger
1 tablespoon of Brown Sugar
Dash of orange juice or pineapple juice
Marinate salmon and bake in oven

Spinach Salad w/ fresh bread (Buy bread or bake Pillsbury bread)

1 bag of baby spinach
4 boiled eggs chopped
1/2 of a medium red onion sliced and diced
Buy bacon bits or cook 6 slices of bacon and crumble
OR
Spinach cranberry Salad

1 lg!. pkg spinach salad leaves
small package of crumbled blue cheese
3/4 cup walnuts
1/2 cup dried cranberries
1 bottle raspberry vinaigrette

Apricot glazed chicken or pork w/ mashed potatoes

1/2 - 3/4 of jar of apricot preserves
1 envelope onion soup mix
1 small bottle of Russian dressing
meat of your choice (chicken or pork)

Preheat oven to 350°F!.
In medium saucepan combine ingredients and warm until preserves melt!. Place meat into baking dish and pour glaze over meat!.

Bake until chicken or pork is cooked through, basting frequently!.
Cook mashed potatoes and serve chicken or pork on top!.

Chicken parmesan
1 egg
1 c!. milk
Italian seasoned bread crumbs
Vegetable oil
32 oz!. jar spaghetti sauce
Mozzarella cheese
1 pkg!. boneless, skinless chicken breasts

Tenderize and flatten chicken between 2 pieces of plastic wrap!. Combine beaten egg and milk!. Dip chicken into egg-milk mixture, and then into bread crumbs coating each side!. Fry coated chicken in just enough oil approximately 4 minutes on each side or until golden brown!.
Place fried pieces in a rectangular baking pan!. Pour spaghetti sauce over chicken and cover pan with foil!. Bake !. Uncover and sprinkle with cheese!. Bake uncovered 10 more minutes!.

Beef fajitas
1 lb!. beef fajitas or boneless chicken thighs
1 onion, sliced
1 green pepper, sliced
2 tomatoes, sliced
2 tbsp!. cooking oil
1/4 tsp!. salt (to taste)
1/4 tsp!. pepper (to taste)
1 tsp!. ground garlic (optional)

Cut fajitas into strips, place in a preheated wok with oil already heated!. Cook at high heat along with sliced onions!. After fajitas are half-way done, add green peppers!. When almost ready, add tomatoes!. Avoid over-cooking!. Afterwards, shred a pound of Colby and Monterey Jack cheese and spread Put in a 350 degree oven to melt!. Place fajitas in center and serve!. Serve w/ warm flour tortillas

Taco Salad
1lb of ground hamburger or turkey buger
1 bag of Doritos
1 large tomato (diced
1 8oz bag of cheese (cheddar or Mexican/3 taco cheese)
1 onion
1 pack of taco seasoning or make it yourself)
1/2 head of lettuce
*optional olives sliced
Cook meat with onion till brown add seasoning

Layer Doritos, then meat, diced tomatoes, lettuce, cheese and salsa!. Start layers again, put the last cheese on top and place in oven till it melts

Here's three very good recipes i've used in the past!

GINGERED PUMPKIN SOUP

2 cups pumpkin, cooked
3 cups chicken broth
3 tablespoons butter
1 cup light cream
1 medium onion, diced
1 medium apple, diced
1 teaspoon ground ginger
1/2 teaspoon salt

Melt butter in a heavy saucepan!. Sauté onion and apple until tender!. Stir in pumpkin, broth and spices!. Remove from heat!.
Process or blend until smooth(if you don't want to it's okay)!. Return to saucepan and stir in cream!.

Heat through and serve!.

SHORT-CUT SPANISH RICE (my favorite!!!)

3 cups cooked rice
1 teaspoon Taco seasoning
1 1/2 cups Tostitos Medium Salsa
garlic powder, to taste
salt and pepper, to taste

Quick Version (Side Dish):

Steam or boil rice according to package directions to measure about 3 cups!. Cook rice slightly on the dry side (steaming is best)!. Minute Rice may be used for an emergency side dish!.
Combine ingredients and cook 5 minutes (no more), just until heated through!. Season to taste and serve!.


Main Dish Variation:

For a quick, hearty main dish, sauté 1/2 inch cubes of pork in a tablespoon of olive oil with 1-2 large onions, chopped, one green or red sweet pepper, cut into chunks, and a few cloves of fresh, minced/crushed garlic!.
Add ground cumin, paprika, and cayenne, (or just use Taco seasoning) to taste and stir in salsa and cooked rice!. Any combination of seasonings or quantity of onion and pepper may be used!.

PASTA PRIMAVERA

1/2 lb!. thin spaghetti
3/4 c!. broccoli, chopped
3/4 c!. carrots, sliced thin
1/4 c!. peas
1/2 c!. green beans
2 c!. ripe tomatoes, chopped
1 tbsp!. olive oil
1/2 tbsp!. vegetable oil
1/2 clove garlic, minced
1/2 tsp!. parsley
1/2 tsp!. basil
1/8 tsp!. salt
1/4 tsp!. pepper
1/4 tsp!. thyme
1/2 tsp!. oregano
Pinch of red pepper flakes
1/4 c!. grated Parmesan cheese

To prepare the Primavera sauce, heat the oil in a large skillet and add the minced garlic and cook!. Add the beans, carrots, peas, and broccoli and stir until crispy tender for at least 2 1/2 to 3 1/2 minutes!. Add the tomatoes, herbs (basil, oregano, parsley, pepper and thyme) and salt!. Simmer for a minute or two until the tomatoes are tender, but remain somewhat firm!.
Meanwhile, add about 1 quart of water to a large pot and bring to a rolling boil!. Add the spaghetti; stir around so the pasta does not stick together!. Cook for about 8 to 10 minutes until al dente (somewhat firm)!. Drain well in a colander and put into a large pasta serving bowl!.

Add the Primavera sauce to the spaghetti and add the grated Parmesan cheese!. Toss and serve immediately!. Serve with toast sticks!.

VARIATION: Use any vegetables available, fresh or frozen!. Zucchini and cauliflower are good choices!.

Shrimp Fried Rice and Miso soup!. Very simple, very cheap and feeds a lot of people!. Use chicken or pork if you don't do shrimp!. The asian aisle in your supermarket carries packets of fried rice seasoning!. The rice recipe is on the package!. Same aisle you'll find the miso soup!.

Tonight I'm making spaghetti casserole!. An easy twist on your basic spaghetti and meatballs!. Cook off some spaghetti in one pot, some ground beef in another!. Mix together in a casserole dish with a jar of sauce and top with your favorite cheese!. Bake in the oven unitl cheese is melty!.Www@FoodAQ@Com
