What to cook for mother-in-law...?!
Her and I don't get along too well!. She just moved into her own place after living with her sister for a while so she's all alone at home and I want to invite her over for dinner sometime!. I just don't know what to make!. I don't think she has any allergies, and will eat just about anything!. She really likes pasta, but the dishes I know how to make are kind of simple!. When creating a menu, focus not only on the main course, but what side dishes you can serve that will compliment it!. For example, If you WERE to make a pasta, would you accompany it with some garlic bread!? Bruschetta!? Ceasar Salad!? If you plan out an overall "theme" for the menu, it will take the whole experience to another "impressive" level!.

Lasagna is slightly easier than manicotti, but if you want something besides pasta, why not a nice roasted chicken!? Just blend herbs with butter or olive oil and rub all over the washed and dried bird and roast at 350F for 1 1/2 hours, basting with remaining herb mixture occasionally!. Serve with mashed potatoes and steamed veggies!.Www@FoodAQ@Com

Pesto Sauce:
Ingredients
1/2 cup pine nuts
2 cups fresh basil, chopped
3 garlic cloves, chopped
1 cup extra virgin olive oil

Procedures
1!. PLACE pine nuts, garlic, basil and oil in a food processor and pulse until finely blended!.
2!. TRANSFER pesto from food processor to bowl!. Add all remaining ingredients!.
3!. TOSS with your favorite pasta or chill and use in 2-3 days!.
2 dozen Italian tomatoes, or 12 cups chopped tomatoes

1 medium onion, chopped
2 cloves garlic, crushed
2 tablespoons chopped green bell pepper
2 tablespoons chopped carrot

Ingredients
1/2 teaspoon olive oil
2 fresh salmon filets
1 teaspoon minced fresh thyme
1/2 teaspoon minced fresh grated orange ring
1 teaspoon salt
1 teaspoon freshly ground black pepper

Preheat oven to 400!.
Put oil on bottom of baking dish and rub salmon in oil!.
Combine thyme and orange rind then rub over fish!.
Season with salt and pepper!.
Bake 18 minutes!.

8 tablespoons extra virgin olive oil
5 assorted small summer squash dice
1 teaspoon salt
2 teaspoons freshly ground black pepper
1 yellow onion diced
2 garlic cloves crushed
2 teaspoons ground cumin
2 tablespoons cider vinegar
2 cups steamed rice cooled to room temperature
1/2 cup coarsely chopped fresh parsley
Chopped lettuce leaves as needed
Directions
In a frying pan over high heat warm 2 tablespoons of the olive oil!.
Add one-third each of the squash and season to taste with salt and pepper!.
Sauté stirring often until lightly browned and slightly soft then transfer to a bowl!.
Cook remaining squash in 2 batches in the same way using 2 tablespoons oil with each batch!.
Let the squashes cool!.
In the same frying pan heat remaining 2 tablespoons oil over medium heat!.
Add onion and sauté until lightly golden!.
Stir in the garlic and cook briefly!.
Add the cumin then reduce heat to low and sauté for 2 minutes longer!.
Add to the bowl holding the squash then add vinegar, rice and parsley and toss to mix well!.
To serve line individual plates with lettuce leaves and spoon the salad on top!.

1 tablespoon Dijon mustard
1 tablespoon cornstarch
1 teaspoon freshly ground black pepper
4 baked potatoes
Directions
In a large frying pan sauté vegetables in stock until most of the liquid is gone then mix remaining ingredients together in a bowl and add to the vegetables in the pan!.
Mix well and cook stirring constantly over low heat for 1 minute then pour over hot split baked potatoes

Prepare leeks and keep them whole!.
Skin onion and chop finely!.
Melt 1/2 of the butter and fry leeks and onion until leeks are just gilded and onion is transparent!.
Transfer to ovenproof casserole which will hold the leeks in 2 layers!.
Pour tomato juice over leeks!.
Combine Worcestershire sauce, lemon juice and sugar and mix well!.
Drizzle over tomato juice!.
Dot with remaining butter!.
Cover casserole and bake at 350 for 1 hour!.

The way to impress is keeping what you cook simple, it's all in the presentation!. You could start with an Antipasto Italiano (cold cuts, cheese, black and green olives, giadiniara, on a bed of lettuce)!. This you can pre-prep and refrigerate!. Okay go with the pasta, if it was me I would throw in a handful of chili flakes in the sauce, but its you!. Prepare your sauce as normal , but instead of the normal mince, use a couple of italian pork sausages remove the skins and brown the meat well!.
As for the pasta, I have used that pasta that is about three foot long, so when she slurps the pasta she will slurp her lungs out also!.!.!.!.!.!.
The only thing other would be a nice gelato, and an espresso!.
For goodness sake, if your going to go Italian on this one, A bottle of home made vino or a nice bottle of red (italian of course)!.
I might sound anti mother in law (do cows give you milk) or mean, but I think you sound like you need a good laugh!.
