My mates Arris and Tango are tohave xmas day with me, Arris is a veggie, he wont touch turkey, dont like vegetables much, I suggested roast potatoes and gravy, he said he wants stuffing. What else could I suggest that might be appetizing Also Tango dont like mince pies, pudding or trifle, what dessert could I put together to tempt him

Veggie Stuffing
Ingredients:
1 medium onion -- chopped
4 tablespoons butter
1/2 cup celery -- chopped
10 slices bread -- cubed
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sage
1 can vegetable soup
1/2 soup can water
Directions:
Saute the onion in butter until soft. Combine all ingredients together in a large bowl. Pour into a greased casserole; cover and bake at 325F for one hour.
A veggie who doesn't like many vegetables! How about tofu soup? I'm not being snide. Many vegetarians like it, and it would go well with stuffing. Also, how about ice cream for desert. I feel for you! All the best!

Most supermarkets have a section for veggies ... a nut loaf, which you roast, with potato and gravy!! Pudding wise, I make a really nice fruit salad soaked in sherry!
How about chicken and eggplant parmegiana? Chicken for the friend who won't eat veggies and eggplant for the vegetarian. Caution: some vegetarians don't eat cheese. Check with your friend, first.
My recipe:
1 eggplant
Italian Style breadcrumbs in a bowl
2 eggs
garlic salt
spaghetti sauce, about 1 cup
Parmesan cheese, grated
Mozzarella cheese, grated
Oil for frying
Slice eggplant into 1/2 inch to 3/4 inch slices. Soak in cold water with about a teaspoon of salt for half an hour. Drain and pat dry. No need to peel the eggplant.
Heat two inches of oil in pan over medium heat while preparing the rest of the food
Beat the eggs in a bowl with 1 teaspoon of garlic salt. Dip eggplant in, then dredge through the breadcrumbs, covering well.
Fry until golden brown, drain and place in single layer on a cookie sheet or casserole dish.
Preheat oven to medium heat (350 degrees fahrenheit).
Spread about a tablespoon of spaghetti sauce over the eggplant, sprinkle with Parmesan. Top with mozzarella cheese and bake in oven until cheese has melted.
For the chicken, just buy boneless, skinless chicken breast. Pound out thinly and follow directions above. You can also do this with veal or pork tenderloin. The trick with the meat is to slice it no thicker than 1/2 inch. You can do all this the day before, just don't put it into the oven until 1/2 hour before you want to serve it.
Italian style potatoes:
figure on 1 potato per person if using large potatoes, three if using red or "new" potatoes.
Ingredients:
potatoes
1/4 cup extra virgin olive oil
stick of butter
oregano, basil, fresh pressed or minced garlic to taste
kosher or sea salt
pepper to taste
Peel potatoes if you like, slice 1 inch thick, then rinse. Dump in slightly salted water and boil for 5 minutes. They should be slightly - very slightly - tender.
Drain. Place in single layer on cookie sheet. Drizzle with oil and melted butter, then sprinkle with herbs, garlic, pepper and salt to taste.
Throw the pan into oven set at 375 degrees. Bake until golden brown. It's important to turn the potatoes over occasionally so they brown on both sides. This takes about an hour. You can turn the heat up to 400 degrees to make this go a bit faster, but you have to turn the potatoes more. Again, you can do this the day before and just heat the potatoes for 1/2 hour if you cook them 1/2 hour the day before.
Pound cake-
This is an old American recipe. Colonists called it pound cake because it used a pound of all ingredients. This modern version uses less than a pound of everything because we use smaller pans. This is my own variation.
Preheat oven to 350 degrees (medium heat). Grease and flour a large bundt pan.
3 sticks (1 and 1/2 cup) butter, softened
3 cups sugar
6 eggs
3 cups flour
1 cup sour cream
3 tablespoons almond extract
Cream butter and sugar until fluffy. Add eggs, one at a time, alternating with the flour. Dump in rest of ingredients and beat on medium until smooth.
Pour into pan and bake for 1 hour and 20 minutes. Let cake cool completely before turning out of pan.
Variations: instead of almond, use vanilla extract or use vanilla extract and one generous tablespoon of orange peel or lemon peel. Some people like it when I add two cups of chocolate chips with 2 tablespoons of vanilla, but I think it's too rich!
