I have to cook for 70 people & the menu has to be "fork lunch/ buffet!.

Spinach with fresh strawberries, hearts of palm and toasted walnuts in a sweet onion poppy seed vinaigrette
Mixed Baby Greens
Pecans, onions, gorgonzola, fresh raspberries, and raspberry vinaigrette
Caprese Salad
Tomatoes with fresh mozzarella and basil leaves drizzled with extra virgin olive oil, black pepper, and sea salt with balsamic vinegar on the side!.
A classic ceaser or an option of one wth shrimp or salmon

depends if it's a hot or cold buffet!. Cold meats eg ham, beef, chicken!. Quiches-spinach and ricotta, roast pepper etc!. Stuffed eggs, gala pie!. Then offer a selection of salads including leafs, rice, pasta, potato, coleslaw etc!. Offer selection of breads too!. You could also add hot roast potatoes!. Hot buffet can be anything you like, chili con carne, beef stew, lasagne, meat and vegetarian, roast potatoes, hot breads, thick all in one broth, hot quiches, still offer salads and accompaniments!.
Desserts, I find trifle, pavlovas, apple pie and cream always go down well!. Profiteroles for the chocolate lovers, or a chocolate fountain with fruit skewers!. also offer a cheeseboard and fresh fruit!.Www@FoodAQ@Com

Salad selection - potato salad, green salad, coleslaw, pasta salad, rice salad, tomato, pea salad!.!.!.
and a selection of different breads
For dessert, Apple pie, Pavlova, Cheesecake, Death by Chocolate

Salad nicoise would be good!. It's simple and the ingrediants are cheap!. The recipe below is a more complex then the one I had!. The ones I've had I acutally had in France and they just make it with rice, canned tuna, green beans and halved red potatoes with an oil dressing!. You can even make it in batches since the rice can be set aside!. Just add the tuna last!.Www@FoodAQ@Com
I think the idea behind a "fork lunch" would be that the guests can basically eat with a fork and their hands - similar to finger foods!. I would do lots of "snacky" foods - possibly a crudite, some various kebabs, meatballs, different breads etc with pates, spreads etc etc!.Www@FoodAQ@Com
one thing that i always make for my family on special occasion's is these little pizzas it is SO simple!.!.
1: lay your biscuits out on a pam sprayed,foiled cookie sheet!.
2:spread out your biscuits a little more than an inch than they already r
3: place one spoon of tomato sauce on each spread biscuit
4:add as much shredded cheese and/or no more than 3 pepperoni`s
5:bake until cheese is melted and biscuits are golden brown
5 step pizza!!!
