A formal 7-10 course meal is hard to do without spending a good bit of money, but let's try:

An assortment of breads and cheeses
Shrimp cocktail
Tomato bruschetta
Artichokes, steamed or stuffed
Vegetable kebabs
Asparagus wrapped in beef
Chicken, stuffed with cheese and/or dipped in bread crumbs
An assortment of fruit, perhaps with a chocolate fondue to dip in
A citrus sorbet or some other light ice desert, like Italian ice

I would keep the main courses small since it's such a big meal!.Www@FoodAQ@Com

Go to cotsco or BJ's wholesale club and they have cool appetizers! Buy in bulk and save money!
(Mozzarella sticks, breaded oven roasted shrimp, shrimp cocktail, scallops with bacon, egg rolls, MINI QUICHES, )
Cheese and crackers! CUT UP SOME PEPPERONI TOO and put in one tray with cheese and crackers!
Veggie plate with dip!
Lasagna or baked ziti is good because you can make ahead of time!
A nice roast with potatoes and carrots around it!
Green beans!
A salad!
For dessert- a carrot cake or mousse cake! Brownies are easy to make!
a FRUIT SALAD!
ALLRECIPES!.com has some great recipes!

GOOD LUCK!!
