Ladies lunch?

I'm having some ladies over for lunch and was wondering some suggestions for what to serve. Something fun and yummy would be good...all I can think of is sandwiches!


Answers:
Do a nice chicken salad with grapes & chopped walnuts. Serve with rolls or croissants so those who wish can make a sandwich. Serve with a green salad that you have added snipped dried cranberries to. And as a sweet try the fruit recipe below. Put some slices of angel food cake or pound cake alongside to put the fruit over. This was a HUGE hit when I served it. I combined all the ingredients the night before ahd cooked it that day:
Hot Curried Fruit
10-12 servings
8 ounce can apricot halves
16 ounce can sliced peaches
16 ounce can sliced pears
1 1/2 cups sliced bananas
17 ounce jar of dark pitted cherries
2 tablespoons cornstarch
1 tablespoon curry powder
1 tablespoon cinnamon
1 cup brown sugar
1/2 cup butter, melted
1/4 cup brandy or sherry wine
Drain all fruits and placed them in a 2 qt. buttered baking dish. Combine cornstarch, curry powder, cinnamon, and sugar in small bowl. Sprinkle the sugar mixture over fruit. Combine melted butter and brandy and pour over fruit. Gently toss to coat all the fruit. Bake at 350 degrees for 30 minutes.

ROLLED TACOS WITH A CHEESE SAUCE, REFRIED BEANS AND AVOCADO SALAD.

I have luncheons often, and everyone seems to love it when I make all different dips.
Creamy Crab Dip
Artichoke Dip
Cheese Dip
Dill Dip
Spinach Dip


I set a huge display with crackers and fresh breads and veggies and neat bowls with all the dips and everyone loves it!

chicken salad served on croissants, a fruit salad and veggies with dip, cheese and crackers, chips and if you would like...a warm soup...chicken and wild rice..or any other preference...

Everything can be made ahead of time so you dont have to stress last minute.

To start, how about chop up some tomatoes (discard the gooey bits inside), add chopped onion and parsley. Mix with olive oil, black pepper and balsamic vinegar. Serve on toasted french bread.

Marinate some chicken wings/drumsticks in chopped garlic and ginger, and soy sauce (add some water otherwise it would be really salty). Then roast with honey. This makes great finger food/starters/picnic food! Serve with green and potato salad.

seafood crepes with a lobster sauce

Duchesse potatoes BUT use sweet potatoes (for the color) or maybe potatoe croquettes

say maybe a mescalin salad with goat cheese and walnuts or apples or pears

and dessert
Zabaglinoe
marsala wine 8 oz 240 mill
sugar 7 oz 200 gms
egg yolks 10 each 10

combine everything together

place bowl over pot of simmering water until foamy and real thick
this will take more then five minutes it is a good work out
That serves from 5 - 6

serve warm with strawberries in a tall glass
now that's LUNCH

A seafood strata ... mini rye bread ... fruit salad.

lobster salad pasta salad ...

a green salad topped with thinly sliced roast beef, chicken or salmon ... mini rolls (or mini party breads)

shrimp w/ pasta
sauce=butter sprinkled with a little of parmesean cheese and parsley

its simple yet very fancy.

Here is what I would serve:


Chicken tortilla wraps (recipe below)
mini cornbread muffins
cut up veggies with ranch dip
chocolate mousse w/cinnamon sugar tortilla chips (slice tortillas into strips, fry then toss in cinnamon and sugar)



Chicken Tortilla Wraps

Amount Measure Ingredient -- Preparation Method

4 fat free flour tortillas
1 lb boneless skinless chicken breast halves -- cut
in thin strips
1 med onion -- sliced
1 sm clove garlic -- finely chopped
2 tbsp Worcestershire sauce
1/4 tsp salt
1/4 tsp ground black pepper
2 c shredded lettuce
1 med tomato -- chopped
3/4 c reduced fat Ranch-style dressing

Heat oven to 350°.

Wrap tortillas in foil. Heat in oven for 10-15 minutes or until warm.

Coat large nonstick skillet with cooking spray. Place skillet over
medium-high heat. Add chicken, onion and garlic; saute until chicken is
no longer pink in center, 4-6 minutes. Stir in Worcestershire sauce,
salt and pepper.

Divide chicken mixture among tortillas. Top each with lettuce and
tomato. Drizzle each with 2-3 tbsp dressing. Roll up the tortillas and
serve.
