What do I take for the Office Breakfast Meeting?

I was thinking of making a Scrambled Egg Bake-
I need something that we can all eat for Breakfast-
Dosen't need to be reheated in an oven- Microwave O.K.
Someone stole my idea- I was going to bring Pigs-In-a-Blanket
Also deviled eggs.
WHAT ELSE CAN I MAKE TO BRING?

I've used this, is always a hit;
BREAKFAST PIZZA

On a pizza pan spread:

1 tube crescent rolls, to form 1 crust
1 lb. package thawed frozen hash browns
1/2 lb. sausage, browned
1 cup cheddar cheese grated
4 eggs beaten well with a little milk and salt and pepper

On top of crust place hash browns crumbles up, spread sausage next. Make sure that both go to the edges of crust. Slowly pour eggs over top of hash browns. Then sprinkle on the cheese all over the top. Bake at 350 degrees for 30 to 40 minutes. Cut in pizza slices and serve with fruit and juice.

Do scrambled eggs in the microwave and serve with smoked salmon

Something classy yet fun, like a fruit tray.
If you're going for something seasonal then you're do doughtnut holes (not the powdered kind) with sprinkles.

How bout bagels and cream cheese? That is usually pretty popular. If you can manage to keep it hot a nice fritatta would be great!!! How bout b-fast rolls, eggs, cheese and hot sauce in tortillas...easy to make, easy to keep warm.

Ingredients

2 handfuls of porridge oats
8 dried apricots
6 dried dates
A handful of sultanas
12 cashew nuts
1 eating apple
soya milk
plain soya yoghurt
fresh blueberries

This is best prepared the night before.


Chop all of the dried fruit and cashew nuts into small pieces. Mix them together in a dish with the porridge oats.
Pour over soya milk until the mixture is covered. Peel, core and grate the apple and mix into the muesli mixture.

Cover and refrigerate overnight.

The next morning stir the mixture and add a few spoonfuls of plain soya yoghurt and a handful of blueberries.

Great Idea. Try a quiche. it can be served warm. it has eggs in it or you can make a vegetarian one. look it up on www.foodnetwork.com it tast great good luck

Benedict Strata
Makes 6 servings

1 package (12 oz.) English muffins
6 slices (4 oz.) Canadian bacon, chopped
6 eggs
1 1/2 cups skim or low-fat (1%) milk
2 tablespoons reduced-fat mayonnaise
2 teaspoons grated lemon peel
2 tablespoons lemon juice
Chives, optional
Halved lemon slices, optional

Split muffins and cut into cubes. Alternate even layers of muffin cubes and ham in lightly greased 8 x 8 x 2-inch baking dish. In medium bowl, beat together eggs, milk, mayonnaise, peel and juice until well blended. Pour evenly over muffin-ham mixture. Cover. Refrigerate several hours or overnight.

Uncover. Bake in preheated 350°F oven until golden brown and knife inserted near center comes out clean, about 50 to 60 minutes. Garnish with chives and lemon slices, if desired.

Portable Pasta/Egg Salad
(12 servings)

1 cup (8 oz.) reduced-fat sour cream
1 can (4 oz.) diced green chilies
1 teaspoon ground cumin
9 lasagna noodles, cooked and drained
1 can (12 oz.) Mexican-style whole kernel corn, drained*
4 cups shredded lettuce
1 jar (16 oz.) salsa, divided
12 hard-cooked eggs**, sliced, divided
1 cup (4 oz.) shredded reduced-fat Monterey Jack cheese, divided

In small bowl, stir together sour cream, chilies and cumin until well blended. Place 3 of the noodles across bottom of 13 x 9 x 2-inch baking dish. Over noodles, evenly layer 1/2 cup of the corn and 1 1/3 cups of the lettuce. Dollop with 3/4 cup of the salsa. Evenly layer with slices from 5 of the eggs and sprinkle with 1/3 cup of the cheese. Repeat layers substituting sour cream mixture for salsa. Repeat layers again with remaining ingredients using 3/4 cup of the salsa and remaining 2 eggs. Dollop with 1/4 cup salsa. Cover and chill to blend flavors. To serve, cut into squares. Serve a portion of all layers.

*Substitute 1 1/2 cups cooked and drained fresh corn kernels (about 3 medium ears) and 2 tablespoons each finely chopped sweet red and green pepper, if desired.

Fa-La-La-La-La Frittata
(4 to 8 servings)

? Cooking spray
? 1 cup broccoli flowerets
? 1 cup sliced fresh mushrooms
? 1/2 cup julienne strips sweet red pepper
? 1/2 cup sliced green onions with tops
? 1/2 cup (about 2 oz.) flaked crab meat or surimi (imitation crab meat)
? 8 eggs
? 1/4 cup water
? 1 teaspoon Italian seasoning, crushed
? 1/2 cup (2 oz.) shredded low-moisture part-skim mozzarella cheese
? 1 tablespoon grated Parmesan cheese

Evenly coat 10-inch omelet pan or skillet with ovenproof handle (wrap completely with aluminum foil) with spray. Over medium-high heat, cook broccoli, mushrooms, pepper and onions until crisp-tender, about 5 minutes. Remove from heat. Stir in crab meat. Set aside.

In medium bowl, beat together eggs, water and seasoning until blended. Stir in mozzarella cheese. Pour into pan over vegetable/crab meat mixture. Cook over medium heat until egg mixture is set at edges, about 5 to 8 minutes. Sprinkle with Parmesan cheese. Bake in preheated 375° F oven until top is lightly browned, egg mixure is completely set and no visible liquid egg remains, about 8 to 10 minutes. Cut into wedges and serve from pan or slide from pan or invert onto serving platter.

Ur scrambled egg bake w/ fresh juice and danishes would be great and refreshing..

croissants or oatmeal bars (the ecipe is on the back of quaker oates) i liked the idea of fresh OJ too!

ok at parties, people who are on diets usually allow themselves to eat anything, so you should probably bring something thats unhealthy but tasty, considering 60% of americans are on diets =]
