I am having a Dallas Cowboy/New Year's Eve party and need some food suggestions. The game is at noon and that means we are going to have to go about 12 hours so I'm looking for hearty suggestions that won't keep me in the kitchen or cooking the whole time!


Answers:
You will want to have anti-depressants on hand for all the Dallas Cowboy fans.

I don't know if you have an M& M store or Costco near you but both of these stores offer frozen finger snacks. ie sausage rolls, egg rolls, cheese sticks.

Costco also offers premade platers of cold meats, fruits and cheeses.

Meatballs are also great!

Also don't forget the muchies.

Chicken Small Sandwhiches Chips Cheese Crackers Fruit Vegies And Dips A Variety Of All of these are Good to Have

New Year's Jambalaya

1 1/2 pounds Andouille or other smoked sausage
1/4 cup vegetable oil
1 large chopped onion
1 medium green bell pepper, chopped
3 stalks celery, chopped
2 cloves garlic, minced
2 tablespoons Creole seasoning
2 cups chicken stock
2 tablespoons minced pimiento
1 cup uncooked long grain white rice
1 1/2 cups cooked black eyed peas
1/4 cup chopped green onion, both white and green parts for garnish

Serves 6-8

Brown the sausage in the oil in a large saucepan over medium-high heat. Add the onion, bell pepper, celery, garlic and Creole seasoning. Cook, stirring, until the vegetables are softened, about 10 minutes. Add the stock, pimiento, rice and black-eyed peas, bringing the mixture to a boil. Lower the heat, cover the pot, and cook until the rice is tender and all the liquid is absorbed, 20 - 25 minutes. Serve in bowls garnished with green onions.

Bubble & Squeak

1 C cold mashed potatoes
1 C cooked cabbage
salt and pepper to taste
a little oil for the pan

Combine all ingredients, and cook in hot frying pan with a little oil until well browned. I like to serve this with grilled bacon and tomatoes for a hearty breakfast.

my family makes these chicken things alot. Take a small strip of raw chicken, put a small piece of what ever cheese you would like(pepperjack is always good), season chicken,then rap with bacon,secure with a wooden toothpick and broil.

I'd suggest something that you can keep warm in the crockpot, so people can eat whenever they want. Some ideas are shredded beef or chicken (cooked with Mex spices) that can be rolled up in tortillas w/ variety of toppings. Also could have a crockpot of mexican rice to go with the tortilla rollups. Or could keep it simple with sloppy joes in the crockpot.

Alongside the mountain of chips, dips and beverages you'll need for this 12-hour marathon party, I think this might help:

** Italian Club Sandwiches: I love doing these at parties, because you can make as many of these as you want ahead of schedule, and then take them out of the fridge, slice and serve as necessary. They make awesome, hearty finger food, and you can mix and match the meats and cheeses for whatever you happen to have on hand. It's fantastic.

3 large eggs
2 tablespoons whipping cream or milk
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 tablespoon (about) unsalted butter
10 slices bacon
2 (8-ounce) round loaves focaccia bread (7-inch diameter)
1 cup purchased pesto
8 ounces thinly sliced turkey
4 ounces thinly sliced provolone cheese

Whisk the eggs, cream, salt, and pepper in a medium bowl until well blended. Heat a 6-inch-diameter nonstick skillet over medium-low heat. Brush the skillet with some butter. Pour 1/4 cup of the egg mixture into the pan, swirling to coat the bottom of the pan evenly. Cover and cook until the egg crepe is just set, about 1 minute and 30 seconds. Invert the skillet over a plate, and allow the egg crepe to drop onto the plate. Repeat to make 4 crepes total, brushing the skillet with melted butter as needed and stacking crepes on the plate.

Cook the bacon in a heavy large frying pan until crisp. Transfer the bacon to paper towels to drain.

Preheat a griddle or grill pan over medium-high heat. Cut the focaccia horizontally in half. Place the focaccia cut side down on the griddle and cook until the focaccia is heated through and golden brown on the bottom, about 2 minutes. Spread the pesto over the toasted sides of each halved focaccia. Cover the bottom halves of the focaccia with the egg crepes, turkey, provolone and bacon, dividing equally. Cover with the top halves of focaccia, pesto side down. Cut the sandwich into bite-size wedges. Arrange the sandwiches on a platter and serve.

** Chili: A big pot of chili can go a long way. People can eat it on its own, on hot dogs or on tortilla chips for nachos. It can stay warm on the back of the stove about all day and just get better. Have lots of shredded cheese, sour cream, onions, chopped tomatoes, whatever you like on hand for toppings.

** Ribs: Do them in your oven for super tender, low maintenance results.use your favorite recipe, or do this: Brush your ribs with spicy brown mustard (just a little), dust on your favorite spice rub and let the ribs slow roast in the oven for 4 hours (2 hours uncovered, then 2 hours tightly covered with foil w/about 1/3 cup of apple juice or beer, just enough to barely cover bottom of pan) at 250 degrees. Do NOT boil them beforehand. After this, you can baste them with whatever sauce you like and let them sit in the oven at low temperature to stay warm and they'll just get better and better. Or, if you've got a grill going, finish them off on the grill for that last stage of cooking. They'll be falling off the bone, I guarantee it (in fact, you'll probably need a spatula to move them to the grill).

** Chicken wings: If you bake them instead of frying it cuts back on the work. Dust your wings with a mix of seasoned flour (I use salt and 3 peppers (black, white and cayenne), and bake about 30 minutes. Coat with your favorite sauce and allow to bake another 30 minutes.

** Brownies - Luscious. Chocolate. Irresistable. Buy your favorite boxed brand and stir in instant coffee (about 2 tbsp), chopped nuts and chocolate chips (about 3/4 cup ea) to make them fabulous. Serve plain or with icing, sliced into individual squares.

** To drink: Along with the beer and soda, try having a big pitcher of sangria or, if you're really fearless, make some "jungle juice."

1.75 L bottle gin
1 bottle DeKuyper? Sour Apple Pucker schnapps
4 bottles Boone's Farm? Strawberry Hill wine
8 L Hawaiian Punch?
2 containers orange juice concentrate
Fruit (as much as desired)

Use a large container, like an ice chest or something similar. This makes a ton of jungle juice, and is definitely for parties. Allow the fruit to soak in all the alcohol for about 4 - 12 hours. Add all the juice and let sit overnight. Serve the next day. Make sure whomever is drinking this has a ride home, though. It's strong stuff, it's delicious and it sneaks up on you!

Meat ball sandwiches. Buy the frozen meat balls and stick them into a crock pot after their heated add sauce of your choice Bar-b-Que, etc., service Sm. dinner rolls. Or do it pot-luck style which is the best. have the guy buy the drinks and the woman bring there favorite dish. Good luck and happy new year 2007

...Make a huge pot of chili beans,corn bread muffins,cole slaw,potato salad,several dipping chips,nacho sauce(so they can make nachoes later)veggy tray,fruit bowl,and plenty to drink.All can be done the day before.And a crock-pot will cook your beans.Let the beans start up the nachoes later in the day.Be sure to have the right chips,then just bring out shredded cheese,onions,salsa,jalapenos-... the nachoes.As the day goes on the finger foods will do well.

Little smokies. The little hot dogs that you can get at your local grocery store. They keep well in a crock pot just cover with your favorite BBQ sauce. Jack Daniels brand is really good!!! Happy New Year!!

If you have one of those Chinese take outs near you (where, for about $3-$4 you can pick 3 dishes a plate), call ahead and have them make up party-size orders of fried rice, egg rolls, noodles, chicken, shrimp, ribs -- what ever you like. The market has ready made party platters this time of year -- shrimp, deli, etc. Or - a bag of frozen potstickers/dumplings makes an easy appy/party dish. Chips/pretzels and dips are fuss free.


Here's my tweaked recipe for:

Cheesy Fondue Meatballs
Preparation time: 5 minutes Total time: 3 hours

1 package frozen Italian Style Meatballs, thawed
1 10 1/2-oz can cheddar cheese soup
1/2 cup cubed American Cheese
1/2 cup milk
4 oz green chilies
Paprika, to taste (optional)

Mix soup, cheese cubes, milk and paprika together in microwave-safe bowl. Heat on HIGH (100% power) 5 minutes; stir every minute. Place thawed meatballs in slow cooker. Add cheesy fondue sauce and stir to coat meatballs. Simmer on LOW heat for about 3 hours. Stir occasionally. Toward the end of cooking time, add chilies.

As an appetizer, serve on party picks or mini sub rolls.
As a main dish - Add about a small handful or two of dry small elbow macaroni or shells about 45 minutes before the end of cooking time. Be sure pasta is submerged in liquid. The pasta will double in size while cooking. Add additional liquid as needed. Another idea - Omit paprika and add fresh diced tomatoes.

Ham Roll Ups

Ingredients:
2 8oz. pkgs. cream cheese
1 bunch of green onions, chopped
1 envelope dry ranch dressing mix
2 pkgs of 8 or 10 in. tortillas
1 lb. thinly sliced ham

Directions
Combine cheese, green onions, & dressing mix. Blend well. Spread 1 tbsp. of cheese mixture on tortilla & top w/one slice of ham. Roll up & chill a few hours or overnight. Before serving slice each roll up into serving size pieces. Makes plenty & they are delicious. Also you can make days in advance because they keep well in the fridge....ENJOY
