Mushroom Filo Bites

Ingredients

4 large closed cup mushrooms
4 tablespoons vegetable oil
2 tablespoons sauce flour
unsweetened soya milk
salt and pepper to taste
filo pastry

Preheat the oven to 200 degrees. Make the filling using the mushroom sauce recipe. Take 2 sheets of filo pasty and cut them into a square shape. Damp the edges of one and stick the other on top. Then damp the edges of the top piece. put a spoonful of the mushroom sauce mixture on one side of the pastry leaving a gap around the edge. Fold te other side over to make a triangle shape and press along the edges. Once you have used all of the mixture, place them on a greased baking tray andbake for 5 minutes or until golden brown. Serve immediately.

Cocktail sausages.

I like to go totally retro and do mini shrimp cocktails on spoons, cocktail sausages, mini trifles, chicken vol au vents - mini pizzas, sausage rolls - takes everyone back to the 70's and 80's and their childhoods!!

get good quality cocktail sausages,

warm some honey and pour over the hot sausages.

sprinkle with some sesame seed

trust me it's surprisingly delicious

Take medium shrimp, wrap in half pieces of bacon... secure with a toothpick. Brush each shrimp with a ginger-sesame dressing and bake until done. You can also use BBQ sauce (I prefer it this way). Really, really good.

You can prepare these ahead of time and just pop them in the oven close to serving time. Aboout 350 for about 20 minutes.

Coconut Fried Shrimp
Serving Size : 4

1 cup Baker's Angel Flake Coconut
1/4 cup flour
1 tsp. salt
1/8 tsp. pepper
1 lb. cleaned shrimp
1 egg, slightly beaten
Oil for frying

Mix coconut, flour, salt and pepper. Dip shrimp in egg; roll in coconut mixture. Heat oil in large deep skillet on medium heat to 325F. Add shrimp; cook 3 to 4 minutes on each side or until golden brown. Drain on paper towels. Serve with lemon wedges or a sauce, if desired.

Firecracker Coconut Dip

1 8-oz. pkg. cream cheese, softened
1 8-oz. carton dairy sour cream
1/2 cup unsweetened coconut milk or cream of coconut
1 to 2 Tbsp. wasabi paste or 2 Tbsp. prepared horseradish or Dijon-style mustard
1 Tbsp. grated fresh ginger
1 tsp. finely shredded lime peel
3 Tbsp. lime juice

In a medium mixing bowl beat cream cheese with an electric mixer on medium speed 30 seconds. Beat in sour cream, coconut milk or cream of coconut, wasabi paste, fresh ginger, lime peel, and lime juice until smooth.

Serve dip with carrots, sugar snap peas, sweet pepper strips, or other vegetables. Or serve with sesame sticks, grilled shrimp or pork, or spread on a hamburger. Makes 2-1/2 cups dip (about 20 servings).

go to costco, buy three boxes of frozen canapes stick them in the oven. perfect.

I normally cook everything for parties, but i realised that canapes were a pain in the backside, and no-one really appreciated the difference between homemade and heated up, as they were all to busy chatting and drinking.

Like the woman said "life is too short to stuff a mushroom".

Mix some full fat cream cheese with stilton in the magimix. Stuff in small button mushrooms. Use two layers of filo pastry (sandwiched with butter). Cut into squares and then place stuffed mushrooms face down on them. Fold square of pastry up round them using the pastry brush and melted butter. Turn over so that you have a smooth parcel of mushroom face up. Bake at 220c until brown - about 10 minutes. Leave for a few minutes before serving as they are incredibly hot! DELICIOUS!
