you need a good bit of milk and rennent tablets the milk needs to be heated, sheesh its been ages since i made it, it isnt so hard but its messy.

Yes. Cheddar is hard, and require aging. Farm cheese is quicker. I think you just curdle milk with some sort of acid, like lemon juice and run it through a cheese cloth and remove as much water.

cheddar is a hard cheese best done in bulk & ageing is an integral part of the process,with cheese available so easily i doubt if any household goes through the process ,it is best left to commercial outfits.However a soft cheese,cottage or paneer as we in india call it is a relatively simple procedure,add a little lemon juice or vinegar to luke warm milk,stir it in well,allow it to stand till it is well curdled,strain through a muslin or cheese cloth,then hang till drained. Depending on how you wish to use it,it can be cut into cubes,mashed or set in a perforated mould,which allows moisture to escape.
