Question: When smoking a beef brisket, do I undercook it so it can be reheated and put in a heated tray the next day!?
I am smoking briskets the night before for a luncheon at work the next day!. Dwill the meat get tough if it is overcooked!?Www@FoodAQ@Com

It will be dry, if you try to reheat it!.

Wrap it in foil with some water to finish!.

The best way to serve reheated Brisket is shredded!. During the initial cooking bring it to 190F internal temp!. Let it sit still wrapped in the foil to cool about 20 minutes!. Then shred it and toss with sauce and cool in an air tight container!. This will help keep it as moist as possible!.

You still need to smoke it for MANY, many hours to cook it!. You can reheat it the next day, at a very low temp, with BBQ sauce on the sliced brisket; and tightly covered!.Www@FoodAQ@Com
