Last year at our New Year's party, I gave everyone a small bag of fortune cookies with a card that said "We wish you good fortune in the New Year." Everyone loved it. You can buy bulk fortune cookies at a restaurant supply store like GFS. I think a bag of 100 was like $5 or something.

My former boss was billionaire Duane Hagadone of Coir d' Alene, Id. I was fortunate enough to work in his house and experience a world that I would have never known otherwise. Black tie dinner party's were always happening, and the treats were amazing! As I was also 'the help' some of the chefs shared some insight. The most amazing appetizer was these ham...things. It sounds weird, but sooo good! Take the ham slices that are cut as a square and spread a mixture of cream cheese and Dijon mustard over it. Place a pickled asparagus in the middle and roll it up. slice it diagonally down the center. Serve cut side up on a nice platter.

Well, you didn't give much info here! Is it friends or family or business? Is it formal or informal? Meal or snacks? Sit down, buffet? I usually don't do formal sit downs in large crowds. Most of us don't have tables that seat twenty! But I organize the house into 'stations'. The kitchen is the bar area, the dining room is the main food station, the study turns into the dessert room, credenza becomes the coffee bar. The sideboard off the living room is the candy and eggnog area! This way people mill rather than clog in one area.

Depending on where you are in the country, if you can get away with room temperature stuff and as much finger food as possible it really makes things much easier.

You can make it as simple or difficult as you like. If you've the means, caterers can be your lifesavor, even the upscale food markets do a wonderful job catering at a fraction of the price as the catering service.

Variety and presentation are also important and you don't have to be swimming in crystal and china to make it fun, pretty or elegant. Let your mind wander to every day things you have in the house to assit in your decorating and serving needs. Red ribbons, greenery and silver balls and lots of candles make any table festive.

i like to make stuffed mushrooms, because they are good at room temperature.

you need (exact amounts aren't important, it will be good no matter what)

bread crumbs
button mushrooms (as many as you want to stuff)
oyster mushrooms
onions
cream cheese
parmesan
mozzarella
basil, oregano
olive oil



clean the button mushrooms and remove the stems.

chop the onions and oyster mushrooms very small and saute them in olive oil
add spices to taste

put cream cheese in a bowl and mix in breadcrumbs and parmesan, then pour in onion and mushroom mixture and stir. fill the mushroom caps and put in a casserole dish. drizzle olive oil on top, and lay sliced mozzarella (or whichever cheese you like) on top. bake in the oven until lots of the moisture drains out, and then spoon it from the bottom of the dish back on top of the mushrooms.

to tell when they are done, i usually make a few extra and taste them every once in a while.

you can also use this recipe to stuff portobellos, and if you have extra filling i suggest coating two pieces of bread with butter, filling with the mixture, and grilling (a la grilled cheese)' you could also use this idea to make finger sandwiches.
