My husband and I talk about this, too. If we are unfamiliar with the other guests, we bring up general questions covering sports, entertainment, and our "favorite" subject- home improvement.
We ask the "home improvement" questions for good reasons. We have an old home that needs a lot of work. We ask people (including friends and relatives) what they do and "pick their brains." We are very ignorant in that area.
Another topic may be cooking or baking. My husband loves to cook and talks with other people about techniques and recipes.

I just sat through hubby's work Xmas dinner and it was agonizing! work work work work, that was about all they talked about while the significant other's sat with that frozen silly grin pasted on our faces.
If it's biz associates have a no work zone for the benefit of all! Even co-workers need a break!
I assume it's a holiday gathering, why not stay with the theme. Ask everyone what their favorite holiday memory is, what was the oddest thing they received or perhaps they'd like to share a family tradition. If it's an informal party we've had people bring a holiday childhood photo and we play who's that. Holiday trivia questions, - there is a holiday trivia game ala trivial pursuit that is simply questions on cards - a great source of conversation. 8 people around the table sharing holiday memories can take up a great deal of time, once you get it going.
