How do you make really good BBQ ribs??

I want to smoke some ribs outdoors

I've taken the class from them and it was fun.

I like my ribs dry and put a dry rub on them, the link below should have a recipe for a dry run.

Basically, you want to smoke them under indirect heat where the fire is to the side of the ribs.
Smoke them at 200 to 250F for about 4 to 6 hours.
I've read different things about soaking the wood which can be bad for your health.
What I do is take wood chips, since that's what I have, and wrap them in a heavy duty foil pouch. Poke one small hole at the top of the pouch and place them next to the hot coals.
When you're cooking the ribs, the exhaust should not be smokey like you're trying to signal for a rescue craft. It should be very wispy and light. Too smoky means you're wasting that smoke and letting it go into the air.

First you put the ribs in the oven for a very slow heat about 275 and all wrapped in foil - leave them in for at least 3 hours.

Then put them on the grill and sauce them

Have hickory chips soaked in water for a couple of hours to put on the grill to get that smoked flavor.

INGREDIENTS

2 1/2 pounds country style pork ribs
1 tablespoon garlic powder
1 teaspoon ground black pepper
2 tablespoons salt
1 cup barbeque sauce

DIRECTIONS

Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
Preheat oven to 325 degrees F (165 degrees C).
Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).
