2 tb Minced onion 1/3 lb Ground veal
1 1/4 ts Salt 2 tb Butter or margarine
1/8 ts Pepper 1/4 c Water

Instructions:

Stir bread crumbs into milk or water;mix well.Beat in unbeaten egg and minced onion.Add salt pepper nutmeg and ground beef;mix thoroughly. Divide meat mixture into 50 to 60 even portions.Shape into small balls Melt butter or margarine in skillet.Add meatballs;brown thorough- ly shaking pan occasionally to keep balls round.Add water;cover skillet. Simmer 20 minutes.Yield: 50 to 60 small meatballs.

Hi, Swedish meatballs are simple, just go to sweden and make them the same as you do at home, and the swedish Baltic country people will enjoy the difference, did you ever try the Finnish bread, It's like pizza without toppings, kindof boring, but if it's in the company of wonderful Finnish people you'll finnish it off and enjoy the company, a tip on cooking, invite the people and let them help you do it their way.

INGREDIENTS

1 2/3 cups evaporated milk
2/3 cup chopped onion
1/4 cup fine dry bread crumbs
1/2 teaspoon salt
1/2 teaspoon allspice
Dash pepper
1 pound ground round
2 teaspoons butter
2 beef bouillon cubes
1 cup boiling water
1/2 cup cold water
2 tablespoons all-purpose flour
1 cup evaporated milk
1 tablespoon lemon juice

DIRECTIONS

Combine 2/3 cup evaporated milk, onion, crumbs, salt, allspice and pepper. Add meat; mix well, chill. Shape meat mixture into 1-in. balls. In large skillet, brown meatballs in butter. Dissolve bouillon cubes in boiling water; pour over meatballs and bring to boil over medium heat. Cover; simmer for 15 minutes. Meanwhile, blend together cold water and flour. Remove meatballs from skillet, skim fat from pan juices and reserve juices. Stir 1 cup evaporated milk and flour/water mixture into pan juices in skillet; cook, uncovered, over low heat, stirring until sauce thickens. Return meatballs to skillet. Stir in lemon juice. Serve with cooked noodles that have been tossed with poppy seeds and butter.

Follow ATL Girl's recipe. Swedish meatballs do NOT have sauce. They should ideally be made with reindeer meat, but I suppose that may be difficult to come by outside of Scandinavia and Russia.

ATL girls recipe is "Spot-On"..... a very authentic recipe, right down to the Nutmeg...but time consuming.
On the other hand, Ikea sells both the meatballs and gravey packs for dirt cheap and they arent half bad!

Here's the quick version:

Swedish Meatballs
Serving Size : 6

1 egg
1 lb. ground beef
1 cup Stove Top Homestyle Herb Stuffing Mix in the Canister
1/2 cup milk
1/2 tsp. ground nutmeg, divided
1/4 tsp. salt
2 Tbsp. butter or margarine
1 Tbsp. flour
1 cup beef broth
1 cup Sour Cream

Beat egg in large bowl until foamy. Add meat, stuffing mix, milk, 1/4 tsp. of the nutmeg and salt; mix just until blended. Shape into 1-inch balls.

Melt butter in large skillet on medium heat. Add meatballs; cook until browned on all sides, stirring occasionally. Remove meatballs from skillet; cover to keep warm.

Add flour to drippings in skillet; stir until well blended. Cook 1 minute. Add broth; bring to boil. Reduce heat to low; simmer 3 minutes or until thickened. Stir in sour cream and remaining 1/4 tsp. nutmeg. Return meatballs to skillet; simmer 2 minutes or until heated through. Serve over hot cooked Rice or noodles.

Saucy Swedish Meatballs

Ingredients

(4 servings)

1 lb Lean ground beef
1 lg Egg
1 c Fresh bread crumbs, from
2 slices bread
1/4 c Club soda
3 tb Chopped fresh dill OR
1 1/2 tb Dried dill weed
1 1/4 ts Salt
3/4 ts Freshly ground black pepper
3 tb Butter
1 pk (8 oz) medium egg noodles
8 oz Fresh green beans, cut into
1 1/2" pieces, about 2 cups
2 c Sliced fresh mushrooms,
About 8 oz.
1/3 c Sour cream
Fresh dill sprigs, optional


Instructions

In large bowl,combine egg,bread crumbs,club soda,2 tbsp. chopped dill,3/4 tsp. salt and 1/4 tsp. pepper;using hands or wooden spoon, blend well.Shape mixture into 1 1/4" balls.In 12" skillet,over medium-high heat,melt 2 tbsp. butter;add meatballs;cook about 12 minutes, turning frequently until browned on all sides.Meanwhile,prepare noodles according to package directions,add green beans to boiling water along with noodles;do not add salt.When meatballs are browned,remove to plate using slotted spoon.To drippings in skillet,add remaining 1 tbsp. butter;melt over medium-high heat.Add mushrooms;cook about 5 minutes, stirring frequently until crisp-tender.Return meatballs to skillet along with 3/4 cup water and remaining 1 tbsp. chopped dill,1/2 tsp. salt and 1/4 tsp. pepper.Increase heat to high;bring to boil.Reduce heat to low;cook,covered,5 minutes until meatballs are cooked through. Stir in sour cream;cook 2 to 3 minutes longer until heated through. To serve:Drain noodles and green beans;arrange on serving platter. Spoon meatball mixture over noodles;toss quickly.Garnish with dill sprigs,if desired.Makes 4 servings.
