Appetizer Meatballs (aka Russ' Balls in Sauce)

Ingredients
2 lbs breakfast sausage (1 tube of "regular" and 1 tube of "spicy")
2 eggs
2/3 cup of breadcrumbs
1 cup ketchup
4 tablespoons brown sugar
2 tablespoons vinegar
2 tablespoons soy sauce

Instructions
1. Mix together the sausage, eggs, and breadcrumbs. Form into meatballs (the size is up to you, but a ping-pong ball size usually works best)
2. In a large saucepan, cook ketchup, brown sugar, vinegar, and soy sauce until heated through. Do this while cooking meatballs.
3. Cook meatballs in a skillet until brown on all sides. When meatballs are finished cooking, drain slightly and put the meatballs into the ketchup mixture. Cook meatballs in sauce for about 20 minutes - this will finish cooking the meatballs and also form a glaze on the balls.

Note: These meatballs go pretty fast - you might think about making two batches. If making more than one batch, DON'T cook all the meatballs in the same pot. The weight of the meatballs will destroy the meatballs on the bottom, and you'll have a pot full of tasty pork sausage, but meatballs only on the top. Make as 2-pound batches and you'll be fine...

Bring what my dad always gets wonderful compliments on when he has Christmas parties at work: coconut chinese chews. This is my grandma's recipe:

Coconut Chinese Chews

1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup flour
1 cup chopped dates
1 cup chopped walnuts or pecans
2 beaten eggs

Mix ingredients in order named; spread in thin sheet on greased and flowered pan. Bake at 300 degrees for about 40 minutes or until done, not allowing edges to become hard. Cut in 1-inch squares. Roll between palms of hand into ball shape. When thoroughly cooled, ice each ball and roll in shredded coconut. This makes approximately 4 dozen chews.

Icing

4 tablespoons butter
1 tablespoon vanilla
4 tablespoons milk
powdered sugar (about 16 ounces)

Mix liquid ingredients and then add enough powdered sugar to get the consistency that you want. Double the recipe for more icing if needed.

As always when trying a new recipe, do a test batch beforehand so you can adjust to your oven and cooking habits.

A note: this is pretty messy to make, but it's definitely worth it.

Apple Brickel Dip - ooooooooh so yummy! (and easy too!)
8 oz cream cheese - softened
1/2 c brown sugar
1/4 c white sugar
1 teaspoon vanilla
1 package English Toffee Bits

Beat cream cheese, sugars and vanilla. Fold in toffee bits and let stand for 1 to 2 hours. Serve with slices of apple.

5. summer beef sausage platter with assorted sliced cheese, olives, pickles, and peppers with spicy mustard on the side and party crackers

If you need a dessert, try making turtle brownies, they're super easy and always a hit!

1pkg fudge brownie mix
1 cup chopped pecans
1 cup carmel sauce (like the kind for ice cream)

Prepare the brownie mix according to the package directions. Spread into a pan. Next, pour the carmel topping onto the uncooked brownie mixture. Sprinkle the pecans over the top of that and then take a butter knife and swirl the carmel and pecans into the brownie batter. Bake according to the package directions.

If you need something other than a desert, try these meatballs:

1 pkg frozen meatballs (I use the turkey kind)
1 jar chili sauce
1 jar grape jelly (the large size)

Mix the chili sauce and grape jelly together in a crockpot. pour the meatballs into the sauce and mix gently until they are all well coated. Cook on high for 1 hour, stirring occasionally, then lower to the lowest setting. Mmm, good!

Get some artichoke hearts, wrap them in bacon and bake in the oven on 350 until the Bacon browns. Thats it... Simple and delic.

-Sweet and Sour Meatballs-

Depending on how many people your going to feed you can adjust the recipe accordingly.

1} Crock pot w/ a Slow Cooker liner by Reynolds in it .

(Found with the foil,Saran wrap exc. in grocery store...SAVES ON CLEAN UP,NO MORE SOAKING THE CROCK POT after parties..just lift liner out of crock pot and toss liner in trash or if you have left overs put a tie twisty to shut the liner and put in in a storage container w/lid ...The liner will protect your storage container from getting staining.

2} Regular meatballs
3} Kikkoman Sweet and Sour sauce
(usually in the oriental Isle w/ soy sauces exc.)
4} Drained pineapple tidbits

Mix till meatballs are covered
Heat.
Keep crock pot on low during party stirring periodically.
(DONT FORGET THE TOOTHPICKS or FORKS to eat them w/.

This also makes a good meal on a bed of rice.

Get Gallo sliced salami, cream cheese, Bruno's Peppers Just Nippy. (In the pickle isle)
Take 1 slice of salami put cream cheese about 1/2 tsp or so on it then 1 pepper, (some are big so cut in half). Roll up and pierce with a toothpick and put on plate and enjoy. You can also put a drop of your favorite hot sauce on the inside of the roll. Easy and a hit.

Wraps:
flour toritllas
refried beans
sour cream
shredded cheese
salsa

spread all out evenly on tortillas, roll up and then slice in one to two inch pieces and serve with more salsa

Chocolate Chip Cheese Ball

1- 8 oz. cream cheese, softened
1 stick butter, softened
1/2 cup chopped pecans, finely chopped
2 Tbsp. light brown sugar
3/4 cup powdered sugar
1 tsp. vanilla
3/4 cup mini semisweet chocolate chips

Combine all ingredients (except choc. chips) in a bowl, much like you would a cookie dough. Refrigerate for at least half an hour. Take out mixture, form into a ball, then roll it in the choc. chips. Refrigerate again until ready to serve. Serve with graham crackers, vanilla wafers, or shortbread cookies.

I'd go with a non-creamy pasta salad. Everyone will be getting sick of traditonal holiday food anyway. Boil tri-color rotini, add a bottle of Italian dressing, add chopped tomato, green onions, black olives, fresh basil (or dried), and feta.

It's nice to have something different.

Go with taco dip. Easy to make and everyone loves it.

8oz sour cream
8oz cream cheese
1 packet taco seasoning

Let the cream cheese come to room temperature and then mix all the ingredients together until smooth and creamy (as few lumps as possible). Place on a cookie sheet or jelly roll pan to about quarter inch thickness. Then top with lettuce, cheese, black olives and green onions. Grab a couple bags of Tostitos and you're all set. You can double the recipe to make as much as you want.

Orzo salad

Cook orzo according to box instructions and cool
Add tomatoes, cucumber, onion, cheese, dill, mustard vinagrette... You can put chicken or shrimp in it. YUMMY!

chesese ball

The bakeries at Publix and Krogers have excellent cookies.

A fruit platter would be nice if you'd rather bring something healthful.

Crudites with dip are good also.
