we had an employee christmas party each employee was allowed one guest...however we still found out that people that should not have been there did get in....what could be done differently for next year

We issued invitations and required that people RSVP in order to receive a door pass (1 for each attendee) that had to be presented at the door or no entry.
Who cares, just let them in, the more the merrier. And it's not like everyone is gonna do it, so just let them in. Merry Christmas!
Make sure that they have a ticket. Everyone should have 2 tickets. One for the employee, and one for the guest they wish to bring. Make them sign their guest and themselves in once they arrive. Enforce that they are allowed just ONE guest for the party. If they wish to bring an extra guest, let them know that there will be a FEE CHRGED AT THEIR EXPENSE UP FRONT! NO EXCEPTIONS!
Our company party was last weekend. There was a prepared attendee list and no registration at the door. In order to qualify for a free photograph and participate in the door prize drawing, you had to check in and have your name marked on the list. Then you received a ticket for each of these events.
If someone dressed appropriately and walked in after the place was fairly full, I guess they could have obtained a meal from the buffet inappropriately.
However, most of the managers and vice presidents were there greeting people as they saw them and probably would have asked questions if they saw someone unaccompanied that they did not recognize. The party was open to vendors and contractors at a non-subsidized rate, so I doubt that very many came.
Recommendation: for each activity that you want to protect from unpaid or uninvited guests, issue tickets at registration that must be presented to participate in that activity.
Our photographer was hired to generate the pictures and was probably paid based on the number of people who actually gave them a ticket to have their photograph made.
a list at the door or everyone meet at your place of work and then when you meet there car pool and only a select few know where you are going. So no crashers can join and that way you also have a designated driver in case people decide to drink.
Have someone to check them in, if not on guest list, ask the person to pay a full price.
