How do you make...?

Make "Merengitos" I would like to make some and wrap them as a little christmas favor for my christmas dinner.

MERINGUE CHRISTMAS COOKIES

4 egg whites
1 c. sugar
1/2 tsp. vanilla extract
1 c. candied cherries (optional)
1/2 c. nuts, chopped

Beat egg whites until frothy; gradually add sugar, 1 tablespoon at a time, beating until glossy and stiff peaks form. Beat in vanilla. Combine cherries and nuts; fold into egg whites. Drop meringue by rounded teaspoonfuls onto greased cookie sheets. Bake at 300 degrees for 30 minutes or until lightly browned. Cool before removing from pan. Yield: about 8 dozen.

This is what you'll need:

2 cup of eggs whites (4 medium eggs)
1 1/3 cup of granulated sugar
1/16 teaspoon of salt
1/4 teaspoon of cream of tartar
1/2 teaspoon of grating of green lemon
Food coloring (I prefer red)

Directions:

1. Beat the egg whites with the salt until its stiff.

2. Add the sugar gradually, 1/3 cup at once, and beat for 2 minutes each time that you add a portion. The meringue should remain thick.

3. Add the cream of tartar and the grating of lemon and beat for 2 minutes more.

4. Separate mixtures in 4 to 5 portions in small cups. Add to each portion some drops of different food coloring to each one and mix well.

5. Cover two baking sheets with wax paper. Drop a teaspoonful of the mixture onto the baking sheet, making sure they are an inch apart so they have room to expand.

6. Bake in the oven to 275o F for 30 to 35 minutes on the middle rack. When done take them out of the oven, remove the meringue from the paper and let them cool down.

Keep them in a glass container with a cover and they will stay fresh for a few days.
