I am entertaining my family for Christmas breakfast. I live in the south and would like some menu and recipe ideas. Nothing to fussy, to costly or time consuming but yet very tasty and nice. from food to drink and all in between. table setting and center piece ideas too. thanks and Merry Christmas!!

I'm answering as if you're eating a big dinner also....
Make a homemeade breakfast pizza. It's so filling and goes a long way!
Just use store bought pizza crust or make your own using bisquick, top it with sausage gravy or liquid cheddar cheese, chopped ham, sausage, and/or bacon, and shredded cheddar or mozz. cheese on top. It takes no time to make and bake, and your family will love it! Serve juices, coffee, and milk to drink, and an easy centerpiece is a large glass clear vase filled with christmas balls and maybe a little garland or tinsel.
Voila!!!!!

My mom always makes brioches and hot cocoa for Christmas morning. Nothing fancy and the brioches are really good fresh out of the oven.

Good for you taking on the task of being a host! It's quite challenging, but rewarding when preparation and timing are balanced evenly. Now, it really does depend on your style of cooking and what you know your family enjoys...this thought comes to mind:

Depending on the size you are serving preparation time and product for volume must be taken into consideration...the place setting...how much room you have to house everyone during the meal is also essential.

Eggs(scrambled), Jimmy Deans Sausage, Green Onions (finely cut), some frozen O'Brien Style/Hash-brown Potatoes by Ore-Ida, Shredded Cheddar Cheese, Diced Ham, and Some Peppered Bacon...oh yeah...that is your own Skillet Sensation.

For the Centerpiece...buy a large fruit tray...and buy a mixed bag of apples and oranges, or a selection of fruit you know your family will enjoy eating...make sure you have a large decorative bowl...to match the color scheme of your home decorations...and there's your centerpiece...

Prepare all the Food Separately as not everyone likes Skillet Sensations, but it will make it look as though you prepared a feast that took no more than 1 1/2 hours of total prep...but then again...it depends on your style of cooking so time preparations and completion varies...Happy Holidays! First of all you need to set the table very festive even if simply; Set a large candle on a small plate (one big enough to hold candle and catch the dripps) in the center of the table then place some greener around this candle in the center of the table , 2-4 pine branches laid out in a small spray arounf the candle & dish and then if you wish more color in the arraingement put small colored christmas balls in and on top of the greens. Actually you can use any type of Christmas decoration you wish, little angels, fruit, etc. What I havedone for meals like this is a "french toast" type sandwich. . . .Need enough bread to make at least once sandwich for everyone, maybe two if they are heavy eater. You can use regular bread or a nice french bread, any kind of bread you really like. The sandwich itself is made of a nice ham sliced then cheese added then the whole sandwich is dipped in egg nog and then fried like you would french toast. The finishe sandwich is sprinkled with powdered sugar and served immediately. You should have a variety of really nice jams & jellies on the table for those that want them. I found orange marmalade, red rasberry and currant jams/jellies were the best liked. This sandwich is so filling I very seldom served anything else. Once in awhile I would add a fruit cup if the fresh fruit was not to expensive.Start the meal with a choice of fruit juices, orange juice and maybe a cranapple juice. Then for hot drinks have coffee, tea and hot spiced cider. There are a lot ofpackaged mixes for the hot cider that are great. Have it simmering on the stove when people arive, the smell is so inviting. I have found that if you set a really fabuloous table, nice colorful season appropiate linens, have a nice center piece, pretty plates and serve juice in like wine or champagne glasses it makes everything so much fun without costing you a fortune. Also might be nice to have some soft, quiet instrumental Christmas music playing during the meal. Hope this helps. Merry Christmas.

"Are you making those yellow buns?" our daughter asked. "It isn't Christmas without those!"

What they are: Sally Lunn dough (a Swedish yeast dough, with lots of egg yolks), slightly sweet and very tender. We make them up the night before and leave them in the fridge to rise overnight, then bake them after the kids wake up.

What we do, though, is make up a homemade sausage mix -- though for the past year or so we've added a couple teaspoons of a mild curry powder to the mix, and that's what the kids asked for this year. I cook the sausage till it's crumbled, then sprinkle it with a little flour and stir to get it to stick together slightly. Then I let it cool while we make the dough, and make little round buns filled with fresh sausage. We bake those, as I say, in the morning while everyone is sitting around the tree passing out the presents. (Even when they were very small, our children would take HOURS on Christmas because they would open a present and play with it for a long time, then watch their siblings open presents and help THEM play. Mr. and Mrs. Cratchit once asked us how we got our children to be so well-behaved... well, maybe not, but they would have if they were here! :-)

In the past we've also made sweet buns with the same dough but wrapped around a filling of fruit or jam, but the kids have asked us not to make those -- the sausage gives them a really hearty, filling character, and fills them up for the day's activities.

We serve them hot from the oven, with coffee for me and Mrs. Claus--er, my wife, and hot cocoa for the small ones, and everyone on the floor in jammies and slippers, munching these Sally Lunn buns and squealing with delight at each new treasure.

So if you're thinking of having a sit-down breakfast, these are a nice addition (especially since you can do all the prep the day before and just toss them into the oven and cook for 20-30 minutes till they're golden-brown), and they'd go really well with whatever else you're planning to serve (I'd probably go for a nice herb and cheese scramble, slices of a good country ham, and diced red potatoes mixed with mild green chiles and white onion and skillet-fried to a crispy, savory splendor.)

But if your vision of Christmas morning is to have everyone sitting around the tree opening presents and experiencing the magic of Christmas... that's what these are designed for.

whenever we have family in, I always do stuffed french toast for breakfast. Normally, I will make ham & cheese or bacon & cheese omlets to go with for the people who aren't crazy about sweet in the morn. You make the french toast the night before so you can just pop it in the oven in the morning.

Stuffed French Toast

10 cups white bread cubes
1 (8 ounce) package cream cheese, softened
8 eggs
1 1/2 cups milk
2/3 cup half-and-half cream
1/2 cup maple syrup
1/2 teaspoon vanilla extract
2 tablespoons confectioners' sugar
DIRECTIONS
Place bread cubes in a lightly greased 9x13 inch baking pan.
In a large bowl, beat cream cheese with an electric mixer at medium speed until smooth. Add eggs one at a time, mixing well after each addition. Stir in milk, half and half, maple syrup, and vanilla until mixture is smooth. Pour cream cheese mixture over the bread; cover, and refrigerate overnight.
The next morning, remove souffle from refrigerator, and let stand at room temperature for 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
Bake, uncovered, for 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Sprinkle with confectioners' sugar, and serve warm.

for center peices, check Michaels if you have one near you. they have amazing pre arranged artificial plants for Christmas that are like 7-8 bucks right now because it is so close to Christmas. Seriously, they are gorgeous.

toast bacon eggs

I would do it buffet style:
fresh fruit tray
yogurt * cottage cheese * whipped cream * cream cheese
mini muffins * scones * danish pastries
croissant * mini baguettes * bagels
cold cults * cheeses
bacon * sausage links ***easier to lay them on a sheet pan and put them in the over 350* until golden brow
scramble eggs
saute veggies *** onions, bell peppers (all colors), zucchini, squash & mushrooms - sautee the veggies separetley so people can take scramble eggs and top it as they wish.

***cofee * tea bags * iced tea * milk * oj * sodas * chocolate *
champagne * zinfandel wine spritzer *
*** set the table with a nice red or white table cloth then add some levels by putting some boxes or trays upside down so they can hold your trays, cover boxes with other clothes or napkins and them set the trays at different heights, use some fresh fruits, small pine branches, loose ribbon or even those colorfull foam christmas balls scattered around the table.

Baked French Toast Casserole

1 loaf French bread (13 to 16 ounces)
Butter, for pan
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons sugar
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Raspberry Syrup, recipe follows


Slice French bread into 20 slices, 1-inch thick each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F. Spread Praline Topping evenly over the bread and bake for 45 minutes, until puffed and lightly golden. Serve with Raspberry Syrup.





Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg


Combine all ingredients in a medium bowl and blend well. Spread over bread as directed above.


Raspberry Syrup:
1 cup raspberry preserves
3 tablespoons water
2 tablespoons raspberry liqueur (recommended: Framboise)


Combine ingredients in a small saucepan and place over medium heat. Stir until warm and thinned out like syrup.

WHAT'S BETTTER THAN EGGS, BACON, SAUSAGE AND TOAST? ADD SOME HOME FRIES AND YOU'VE GOT A GREAT BREAKFAST.

Breakfast Casserole
(Make night before)
6 eggs
4 cups milk
1 lb of sausage (cooked and drained)
Onions & peppers if desired
12 slices of bread (torn into small pieces)
8 ounces cheddar cheese shreds

Mix all ingredients. Pour into 13x9 pan. Refrigerate overnight. Bake for about 1 hour at 350 until center is set.

This would be good with the overnight French Toast too.

I am also having family over for Christmas breakfast. I am making a breakfast casserole.

Hash browns, eggs,sausage and cheese.

cook hash browns and sausage. Then put into casserole dish and put in eggs that are already beaten (not cooked though) just poor over the hash browns and sausage. Bake in oven for 15 minutes then add cheese and cook for another 10 to 15 minutes. Very easy and feeds as many as you need.

Oh, heat oven to 350.
