Potatoes au Gratin is an excellent side to serve with ham. Slice peeled potatoes really thin and place in greased casserole dish by layers. In between each layer, pour cheese sauce (1 Tablesp. cornstarch, 2 Tablesp. butter, 1-1/2 cup milk - melt butt and blend in cornstarch so there are no lumps, then gradually add milk while stirring constantly. Cook this way until thick but do not boil. Then add 1 cup grated cheese, salt, pepper and teap. of spicy mustard.) . Then bake at 350 for 20-25 minutes. Yum!

Green bean casserole, the recipe is on the side of Campbell's cream of chicken soup.

try making some garlic and ginger string beans or asparagus.
you can make a simple salad too

Acorn squash goes great with ham and is easy to prepare. Get one small squash for every two people. Slice in half and scoop out all of the seeds. Put face down in a shallow dish in the microwave with a few tablespoons of water, microwave on high until tender, about 15-20 minutes. When tender, fill the squash with 2-3 tablespoons of butter and a couple of spoonfuls of brown sugar. Put in the oven at 450 degrees and bake until butter has melted and the sugar has dissolved. These taste great and look very festive on the table.

Applesauce is a nice complement to pork.

This one goes great with anything and is generally loved and appreciated by one and all (even if you don't normally like spinach)!

SPINACH CASSEROLE

3-10 oz. boxes frozen chopped spinach (squeezed DRY)
? cup chopped onion (lightly sautéed in butter until soft)
Large carton small curd cottage cheese
(Note: If cottage cheese seems extra wet, drain some liquid)
? cup grated Parmesan cheese
8 oz. shredded Swiss cheese (? in casserole and ? on top)
3 beaten eggs
1-1/2 t. salt
White pepper to taste

Combine all ingredients except for half of the Swiss cheese and place in greased 2-quart casserole. Sprinkle remaining Swiss cheese on top. Bake at 350 degrees for 45-60 minutes.

The finished product will be too "wet" if you don't remove ALL the liquid from the spinach. I have been told you can substitute broccoli but I haven't tried it.

Fried Apples is fantastic with ham ... This recipe is for 6, you could triple it and have plenty ... but be careful with the spices, start by doubling them, and add more if you think needed.

8 medium Granny Smith apples, chopped
1/4 cup butter
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg

Melt butter in a heavy skillet over medium-low heat. Add apples, brown sugar, cinnamon and nutmeg. Sauté 15 to 20 minutes, or until apples are tender. Serve as a side dish for pork or ham.

green peas

rub a bit of oil in the bottom of a cookie sheet place enough asparagus spears on it for about 6-8 per person this will take two sheets melt butter in the microwave and brush it on then sprinkle with Parmesan cheese and put lemon in a salt shaker and shake it on over the cheese add fresh cracked pepper and a bit of curry and roast , bake or broil until they are just starting to soften then get them out of there while the are roasting slice red peppers in thin rings then use then to wrap each bundle of asparagus for presentation hit then again with a bit of curry mixed into the lemon juice and serve while still nice and warm happy eating

Scalloped potatoes are good with ham.

A garlic risotto would be yummy. Follow the directions on a box of arborio rice to make the risotto, but use a garlic press to add garlic to your simmering broth. I would use vegitable instead of chicken to go with ham. I would also brown about 20 cloves in the sautee pan before you add the rice. Do not take it out if the recipe tells you to. Good luck!

bourbon sweet potatoe corn fritters. Mash a large sweet potatoe with bourbon and butter, mix in cornbread mix . Drop by large tablespoon fulls into a deep fryer, once golden on the outside, drain and dust with powdered sugar or cinnamon and regular sugar. You might have to double the recipe for twenty people.

SCALLOPED POTATOES (OR AU GRATIN)
MASHED TURNIPS WITH BUTTER
STIR FRIED GREEN BEANS WITH HOISIN SAUCE AND SESAME SEEDS
ASPARAGUS WITH HOLLENDAISE
WASABI MASHED PPOTATOES
MANGO SALSA (GREAT WITH HAM)

yeast rolls

ANY kind of pineapple dishes, whether a plain pineapple salad, whipped cream and jello with pineapple, or cooked pineapple in your ham. Something about it that just decorates and compliments your ham! Merry Christmas!

Because ham can be rather salty and or heavy, something like a lite, cold coleslaw can be very refreshing. Add carrotts & apple, and it's really a great side dish!
