Mardi gras party food ideas?

I am throwing a Mardi Gras themed New Years/ Birthday party and I need some help with the menu. What foods would be best for this party & where can I get recipes?


Answers:
You could have a King Cake for the birthday cake. Serve New Orleans Nectar Sodas, Sazaracs and Hurricanes. Well,why don't you just do the usual sandwiches of all types crisps in a bowl drinks lemonade...or if you would like to be picky and have it all planed out and spend allot on presentation....well

I would make a big pot of gumbo...it's very easy and can feed a lot of people! Also, shrimp that's been boiled in a crab-boil (available at most grocery stores) and then chilled.

Beinets

Makes: 50 servings
Prep Time: 20 minutes
Cook Time: 40 minutes
Ready In: 1 hour, 0 minutes
Beignet is cajun french for "French Donut". Cafe Du Monde in New Orleans popularized this tasty, classic Cajun treat.

Ingredients
1/2 cup shortening 1/2 cup sugar
2 packages yeast 6 1/2 cup plain flour
1 tsp salt 1 cup evaporated milk
2 eggs, well beaten


Directions
Cream together shortening, sugar, and salt.

Add one cup boiling water and one cup milk. Set aside.

Mix yeast well in 1/4 cup warm water. Add this and beaten eggs to the mixture and mix well.

Add 3 1/2 cups flour and beat with spoon. Add another 3 cups of flour and mix. Put the dough in a greased covered container in the refrigerator.

When ready to fry, roll out dough 1/4 inch thick and cut into 3 inch squares with a knife. Use knife to cut 1/2 inch slit in the middle of each square.

Fry in deep fat about 360 degrees until golden brown on both sides. Powdered sugar may be sprinkled on top. Drain on paper towels.


Dough may be kept in refrigerator for a few days.

Gumbo, Crawfish Eouffee, Blackened fish, Jambalaya, red bean and rice or other Cajun food. For dessert try kings Cake or Beignets. You can buy Beignet mix and other Cajun mixes on http://shop.cafedumonde.com/

Kept warm on the stove, have 1 pot of shrimp etoufee, 1 pot of red beans, and 1 pot of rice, which goes with either. Then put a basket of corn muffins on the counter with your bowls and spoons. Let people serve themselves at the stove. Serve Hurricane punch in punch bowls and make key lime pies for dessert! (or a King Cake) Decorate with gold, purple and green colors. Pass out bead necklaces from your party store for the guests. Can't go wrong!
