Question: Employee Luncheon Menu Ideas!?
Every month we have an employee appreciation lunch in our office!. We are a small company with 12 office employees!. Instead of ordering out, someone here makes home made meals the the night before (paid for by the owner) and then brings it here to cook it!. We need some ideas for what to make!. Things we have made in the past are chili in the crock pot, a roast in the crock pot & meatloaf Something like these things that we can make ahead of time then cook all morning here in our kitchen!. We usually serve a vegetable and bread of some sort along with these!. We do have a full kitchen here too!. Any ideas, please help! Www@FoodAQ@Com

We used to do these all the time!. The favorites were actually the easiest!. Frozen lasagna pans with salad and bread went over really well!. The other is a crock pot with sweet and sour meatballs!. You start with frozen bags of meatballs and add 1 jar of Heinz cocktail sauce and 1 cup of grape jelly for every 2 bags of meatballs (Armour has the best)!. Then just heat the whole thing up!. Those are gone in nothing flat! We had mac and cheese and jalapeno corn bread with those!.

This recipe for mac and cheese is to die for!

1 lb rigatoni, cooked and drained
1 lb bag each of cheddar, monterey jack, and shredded parmesan
Pint size container of heavy cream

Mix 1/2 cheese with pasta and cream to the pasta, add the rest of the cheese on top!. Bake at 350 until hot and bubbly, about 30 minutes!.Www@FoodAQ@Com

LASAGNA can be made night before and then put in oven to bake in morning!
Garlic bread or a stuffed bread! (broccoli or sausage bread my favorite)

Green beans or a nice salad! A salad with cheese, turkey, olives, pepperoni, etc

Bruschetta bread is good too!

make club sandwiches (u know the layered sandwiches)!. french onion soup could be made in the crock pot!. or make paninies (several different kinds)!. or u could do a theme like Mexican food or German food!. brats could cook in the crock pot w/ stock or beer!.Www@FoodAQ@Com

Shepherd's Pie is one of my favorites!. I took someone else's recipe and made it my own!. I will also include the link to the original recipe here!.

Easy Shepherd's Pie Recipe

Ingredients
1 Tblsp butter (I used I Can't Believe It's Not Butter)
1 medium onion, chopped
2 cloves garlic, minced
1 1/2 lbs extra lean ground turkey
1 package mixed frozen vegetables
1/2 cup chicken broth (use as much as needed to make the gravy)
1 1/2 Tblsp Flour
1 tsp Worcestershire sauce
Salt, pepper, other seasonings of choice (I used about a 1/4 tsp sage and 1 tsp basil)
1 package of sour cream and chives mashed potatoes
1 cup shredded cheddar cheese

Directions
Preheat oven to 400 degrees F!. Spray a 13x9x2 baking dish with Pam!.

Melt butter in large frying pan!. Sauté onion and garlic in butter until tender over medium heat (10 mins)!. Add ground turkey and sauté until no longer pink!. Add salt and pepper, other seasonings and worcesterchire sauce!. Add frozen veggies and half a cup of chicken broth and cook, uncovered, over low heat for 8 minutes, adding more broth as necessary to keep moist!. Add flour and stir to make a gravy!. Heat for approximately 2 more minutes!. If you need to, add more broth for the right consistency!.

Cook potatoes in microwave for 4 minutes!.

Place mixture in the pre-prepared baking dish !. Distribute mashed potatoes on top!. Rough up with a fork so that there are peaks that will brown nicely!. You can use the fork to make some designs in the potatoes as well!. Cook in oven for about 20 minutes, remove and add cheese to top!. Put back in oven for 10 more minutes!. Broil for the last few minutes if necessary to brown!.

I got 8 servings out of this!. You could make two of them to serve your group of 12!.
