Ideas for an inexpensive Christmas Eve Dinner?!
Does anyone have any good ideas!? I'm serving 4, my Husband, my Mother-in-law, my 4 year old and myself!. Please don't say spaghetti, I serve that year round!. I want something new!.Www@FoodAQ@Com

We always serve finger foods on Christmas Eve!. That way if anyone stops by to visit, there is no reheating the food or worrying that there isn't enough!. It's much more enjoyable too, as much of the food is prepared in crock pots and ready a day before!.

Classic Pot Roast
2 pounds beef sirloin tip or bottom round roast
2 medium potatoes, cut into chunks
2 medium carrots, cut into 2-inch chunks
1 medium onion, cut into wedges
1/4 teaspoon pepper
1 (14!.5 ounce) can Italian stewed tomatoes, undrained
1 (10!.75 ounce) can condensed cream of mushroom soup, undiluted
1/2 cup water
Place meat in an ovenproof skillet or Dutch oven!. Add the potatoes, carrots and onion!. Sprinkle with pepper!. Top with tomatoes!. Spread soup over meat!. Pour water around vegetables!. Cover and bake at 325 degrees F for 1-1/2 hours or until meat and vegetables are tender!. Thicken cooking liquid if desired!.

Cider-Roasted Chicken
1 (6 pound) whole roasting chicken
1/4 cup butter or margarine
2 1/2 cups apple cider
6 small unpeeled red potatoes, quartered
6 small onions, peeled and quartered
1 medium green pepper, cut into strips
6 bacon strips
2 small tomatoes, quartered
Place chicken in a roasting pan; dot with butter!. Bake, uncovered, at 375 degrees F for 15 minutes!. Reduce heat to 325 degrees F; bake for 2 hours!. Pour cider over chicken!. Add potatoes, onions and peppers to the pan; place bacon over chicken breast!. Bake 1 hour longer, basting often!. Add tomatoes to the pan!. Bake 30 minutes longer or until a meat thermometer reads 180 degrees F!. Cover and let stand 10 minutes before carving!. Thicken the pan juices for gravy if desired!.

You can either buy a roast chicken from your local grocery store or bake one yourself!. Serve on the side, dinner rolls and steamed veggies(Birds Eye Steamed Veggies) and Mac and cheese!. They sell the already made versions in the refrigerated section in the grocery store!. You can also make a lasagna, garlic bread, and side salad!.Www@FoodAQ@Com
My daughter and I usually prepare cornish hens!. They are inexpensive and 1 hen feeds one person!. Along with that I prepare roasted red potatoes, green beans for my daughter and carrots for me!. For dessert we have pudding parfaits!. And Sparkling Cider or Ginger Ale with with a splash of cranberry juice!.
