sirloin steak fried in olive oil, onions and garlic, then 3 vegs that he/she likes. simple and quick!
What about Chicken breast with bacon wrapped around, new potatoes boiled half way then cooked in oven for a while til nice n crispy with a nice bit of leafy salad. Then do a lovely Cheesecake for pudding!!! Simple but gorgeous!!
Are you somewhere you can grill? I always like a nice piece of grilled (or broiled if you can't grill I guess) fish, with brown rice and salsa. Add a spinach salad with mushrooms and walnuts and a balsamic dressing. It's simple, not too messy.
To make things extra easy, and since it's only a second date you don't want to appear too serious, get some nice store-bought cookes, like those extra-soft pepperage farm ones, and ice cream.

If you want fancier, buy or borrow an electric rotisserie, and cook a chicken or 2 Cornish hens. Use an herb rub on the skin---this is impressive & delicious, and not too difficult!

The one I did for my wife was linguini w/ clams. Very simple and fast. Heat Olive Oil up in a skillet, add a few cloves of fresh garlic (chopped up & make sure you dont burn the garlic). 2 or three cans of Snows canned clams (I used 2 cans chopped and 1 can minced) Warm over medium heat. Add a little dry white wine to taste, little salt and pepper. Simmer for a few minutes to get nice and happy. Serve over fresh linguini and top with fresh flat leaf parsley. Serve with garlic or crusty warmed-up bread. It's easy, fast and only a few dishes to clean.... it's also my wifes favorite. Good luck!

Hello, This is my own recipe, you would never find it in any recipe book. I have patented and I will put it on the market soon, I'm talking about the sauce.
te name is Spicy Cheese Chicken Breasts.
Ingredients:
ad or subtract accordingly to the number of people you are feeding. If you do not like spicy food subtract the chipotle peppers.
Six boneless chicken breasts.
32oz of sharp cheddar chess.
48oz to 64oz of sour cream.
1 cup of milk.
1 red bell pepper.
? Teaspoon of black pepper.
? Carrot.
2 tablespoons of chicken bullion.
2 to 3 Chipotle peppers or more.
2 garlic cloves.
? Onion.
1 tablespoon of mixed herbs.
Italian parsley for decoration.
Preparation:
Boil chicken breasts.
Preheat oven at 400.
Blend all of the ingredients together.
Put chicken breasts on a oven safe container cover the chicken breasts with mixed ingredients and bake it for 15 to 25 minutes or until ready.
Serve and decorate as you please.

How about Salmon Filets, Baked Potatoes with chives or sour cream and a Side Salad or steamed vegetables with a simple rue sauce or herbed butter. Accompanied by a beverage. and a simple berry or fruit dessert.
First and Second dates can be nerve-wracking, and you do not want to be messing up at the last minute or be stuck in the kitchen doing last minute cooking while she is there and waiting for you.
I would prepare something in the morning and have it in the oven
or stove-top slowly cooking away... like a lovely Beef Stew.. a French Burgundy is delicious, simple and it goes all in one pot. All you will need to do and have ready just before she comes, is a bottle of good wine kept chilled, preferably the one you cooked the stew in, a loaf of crusty bread, Italian Bread would go nice, a mixed Salad, of course some fresh fruit, some chocolates, 2 Rum Babas for the two of you for dessert, ( buy these at a bakery) some hazel-nut coffee, and a lovely Peach-brandy liqueur and viola you have a GREAT meat..
As you don't know her well enough yet, steak is risky because you don't know how she likes it. Chicken is always safe and hard to ruin if you're nervous. Keep the first meal as simple as possible. You don't want to spend a lot of time cooking when she arrives so you need to do something that you can have mostly prepared before. How about
To Start: Tiger Prawns in a light marie rose sauce (mayo, ketchup, squeeze of lemon & black pepper) served with sliced avocado and cherry tomato's. You can have everything ready before she arrives except the avocado as it will go black once peeled but it will only take a minute to do.
Main: Chicken breast poached in a white wine and cream sauce. Very easy. pour a little olive in a frying pan and seal the chicken. add a knob or two of butter. pour in some white wine and season with salt & pepper and just a little garlic. cover and simmer on a low heat for twenty minutes or until chicken is cooked through. remove the chicken breasts and add some double cream bring to the boil and reduce until thickens. put chicken back into pan and cover and to be honest I would just turn the pan on low when you are eating your starter and it will be perfect to serve as soon as you've finished. I would serve it with new potatoes and salad. You can have the potatoes on to boil just before you begin your starter so you aren't hanging around between courses.
Dessert: Women love chocolate as a rule (I don't but I recognise I'm an exception!) Chocolate mousse is easy to make but to tell you the truth, I would buy it, add a bit of brandy spoon it into dessert glasses (or champagne glasses will do) top it with freshly whipped cream (not a squirty one - get out the mixer, lets not be too lazy here) and put in fridge to chill and until you are ready to eat it.
If you really want to impress, give her a glass of chilled Kir Royale (champagne and kir liqueur) when she arrives, serve a nice chilled chardonny with the meal, a sweet masala with dessert and fresh coffee and warm cognac afterwards.

Both ideas are finger foods, much more sociable and less pressure on which fork/knife to use etc
