What is an excellent recommended deepfry/candy thermometer?
I purchased a glass thermometer, with the gray bulb at the tip, and cooked hard candy. The glass cracked in the mix!!! I did not know it was suppose to do that!!

I prefer a "probe thermometer" it has a thin metal probe with a long wire attached that you can stick into whatever you need to measure. The other end of the long wire plugs into a little electronic doo-hickey that tells you what temperature the probe is at. The benefit of a Probe thermometer is that you can set an alarm so that it will tell you EXACTLY when it reaches 246 degrees, or hard crack, or medium-rare beef, or boiling or whatever temp you need. And, you can do cool things like stick it into a roast, set the alarm for the desired temp then walk away and forget about it. The stainless steel probe can be washed completely so you don't need to worry about getting turkey in you fudge, or peppermint sticks in you french fries.

I use the same kind and have never had one crack (maybe if you got to blackjack stage?). I also use a dial type which also works great and it is easy to clean. Don't forget to calibrate the thing before candy making and don't touch the tip to the bottom of the pot.
I've always used the one made by Taylor. It's not the best of the best, but they're pretty reliable and cost about $15-20.
Get one for frying and one for candy so you don't contaminate and crystalize your sugar.
It's also nice because it has a clip to attach to the side of your pot.
