Does anyone have GOOD dessert recipes for diabetics?!

Does anyone have GOOD dessert recipes for diabetics?

My boyfriend is diabetic and addicted to sweet stuff. I have only found a couple of good recipes for desserts so far and they are mainly things I've made up myself. Anything that he can take on the go or snack on would be great because we are both very busy, plus my two year old gets these treats too. Thank you!

NEW YORK STYLE CHESSECAKE
1 1/4 cups Vanilla wafer crumbs

4 T margarine (I use Butter because of taste)

1 tsp equal or 3 packets

2 packages reduced fat cream cheese softened

5 1/2 tsp equal measure or 18 packets

2 eggs

2 egg whites

2 T cornstarch

1 cup reduced fat sour cream

1 tsp vanilla

1 pint strawberries

Strawberry sauce

Directions
Mix vanilla wafers crumbs, marg (butter) and 1 tsp equal (3 packets) in bottom of 9" spring form pan (removable 2 piece pan)
Reserve 1 T crumb mixture.
Put remaining mixture evenly on bottom and 1/2 inch up side of pan.
Bake 350 F until crust lightly browned. approx. 8 minutes on a wire rack.

Beat cream cheese and 5 1/2 tsp equal measure (18packets) in large bowl until fluffy, beat in eggs, egg whites and cornstarch.
Pour mixture in the crust
Place cheesecake in roasting pan on oven rack, add hot water to the roasting pan, Bake in 300 F until set in the center 45-60 minutes.
Remove cheesecake from roasting pan, sprinkle with reserved crumbs and return to oven. Turn oven off and let cheesecake cool 3 hours in oven with door ajar.
Refrigerate for 8 hours
Remove sides of pan, cut and serve with strawberries and sauce.

My father-in-law is a diabetic and I make him sugar-free banana pudding. He loves it. You use the Jello sugar-free vanilla pudding and sugar-free vanilla wafers. Mix a little sour cream and vanilla extract in the pudding and it will take out some of the aftertaste from the artificial sweetener. Use bananas and your done.

Note: You can top it off with sugar-free Cool Whip if you like.

my mom and dad are diebetic too, and they would take medication all the time, like my dad, he would always come in the morning, and fill the medicane in the container....i dont want to be diebetic : (

How about to make one hawaiian Aspic?
recipe:
mint leafs (about 10 to 15)
4 pineapples (round slice)
1 melon(mature)
1 papaya (mature)
1 pkg tangerine gelatin (diet)
cut the melon ,papaya and pineapple in pieces.
dissolve the gelatine in hot/cool water
place the fruits in a glass bowl and spill the gelatine on it.
let it about 2 hours in the refrigerator
after 2 hours to dip the bowl and hot water and
turn upside down it.
decorate with pineapple pieces and mint.

the sugar free chocolate chip cookie dough (pilsbury or toll house) in the refrigerated section at the store makes really good cookies and there is sugar free cinnamon rolls you can make too, same section at the store and its pilsbury

Each of the recipe's have ratings. You might be able to find some yummy ones.

I made an orange pie this year for Christmas, and it was a big hit!

Materials required:

Pie crust (the only bit of sugar in this, use an Oreo one for a chocolate flavor)
sugar free orange Jello
Mandarin oranges
Cool Whip Lite

All you have to do is mix everything up in a bowl, pour it in the pie crust and let it freeze.

My dad, (who is also diabetic), loves this.
