Question: Im giving my mum a break and making xmas dinner!?
so we are all veggies!.
we find the whole roast dinner boring now
so im just doing a totally different menu
im 16 but have been cooking for years and am very capable of doing most meals from scratch
even more than my mum :P

how does this menu sound!.!.!.

starter!.!.!.
Cheese and Herb Fritters with Sweet Pepper Marmalade
Ingredients-
4 oz (110 g) Feta, finely grated
4 oz (110 g) Gruyère, finely grated
4 oz (110 g) mature Cheddar, finely grated
3 heaped tablespoons chopped mixed herbs (basil, thyme, oregano and parsley, for example)
2 oz (50 g) plain flour, plus 1 slightly rounded dessertspoon seasoned flour
2 good pinches cayenne pepper
2 large eggs
2 tablespoons milk
3 tablespoons olive oil
salt and freshly milled black pepper
For the sweet pepper marmalade:
2 large red peppers, deseeded, thinly sliced into lengths, then cut into 1 inch (2!.5 cm) pieces
1 tablespoon olive oil
1 medium onion, peeled and finely chopped
2 cloves garlic, peeled and crushed
2 level tablespoons dark brown soft sugar
3 tablespoons cider vinegar
8 fl oz (225 ml) medium cider
salt and freshly milled black pepper
aswell as bruchetta for my fussier members of the family

main-
a really lovely cassarole with cheese dumpings

dessert
would be served later on towards the end of the night
mince pies for my grandparents who are the fussy ones!.
and a big raspberry pavalova with ice cream

Yummy menu! And very gracious of you to take on the task of a holiday meal for your mom!
Try adding a butternut squash soup with garlic croutons as an appetizer or along side the main dish!.
Here's the basic recipe

1 medium yellow onion, diced
2 celery stalks, diced
1 carrot, peeled and shredded
3 tbsp!. vegetable oil
2 bay leaves
2 cloves of garlic, finely minced
3 butternut squash, peeled and cubed
4 cups of vegetable stock/ chicken broth
salt and pepper


In a pot sautee onions, celery, carrots and garlic in the vegetable oil over medium heat until they are soft and translucent!. You don't want to brown the onion mixture, so make sure the heat is not high!.
Add the bay leaves, stock and cubed squash!. Raise the heat slightly!. Cover and simmer for 20 minutes!. Remove the bay leaves!. Take the soup and using a blender or hand held puree, cream the soup so that the onions, squash, celery, carrots and garlic are a smooth consistency!. Return to the stove, salt and pepper to taste!.

The croutons can be made by taking any bread of your choice and cubing it!. Place evenly spread out on a baking sheet and toast in the oven for 5-10 minutes at 360 deg!. In a skillet heat oil and crushed garlic, salt and pepper, oregano!. Toss in the toasted bread cubes and make sure the cubes get coated evenly!. Remove from the skillet and toss with parmesan cheese and top each soup serving with a few garlic bread cubes!. Happy Holidays!Www@FoodAQ@Com

It sounds like you have the makings for a lovely dinner! Your Cheese and help fritters sound delicious, especially with the Sweet Pepper marmalade, i might have to try that soon!

The only other thing I might add would be a nice green salad to serve alongside the cassarole!.

Pumpkin pie maybe, but there is lard in the pie crust!. How about roasted pumpkin seeds, as appetizers, or in a casserole, or salad!. See below!.Www@FoodAQ@Com
