Question: My boss' boss is having a Thanksgiving Day social or potluck!. What should I bring!?
My boss' boss is having a Thanksgiving Day party or potluck!. It's customary to bring a side dish, but I'm at a loss of what to bring!.

Any suggestions!?

I'm thinking something that's "individually" pieced, that can go well with either cocktails or with dinner!. As far as specific ingredients go, there are none!. Not looking to go too fancy, but up there would be nice; and not looking to go dirt cheap - I'd like to make a nice impression!. Easy to make would be ideal!.

also, it has to be something that can hold!. I'd make it that morning, and then transport it over for later on that late afternoon!.

It doesn't necessarily have to fall under the theme of Thanksgiving!.

Any suggestions are greatly appreciated!.

Overall, I'm thinking this would be a wonderful example of something you'd see on Top Chef!

2 cups self-rising cornmeal / 1 egg beaten


1 1/4 cups buttermilk / 2 oz!. cracklins

Generously grease pans to be used and pre-heat oven to 450 degrees!. Measure cornmeal into a bowl and gradually add buttermilk, then the egg and cracklins!. Pour into hot pan and bake for 10-15 min!.

Baked Brie in Puff Pastry is fancy, easy to make and looks like you spent the day in the kitchen!. But It is not individually pieced!. It is an appetizer that is served with toasts or crackers, and that goes well with cocktails!. You can make it with or without a topping or a stuffing!.
You can use a small wheel of brie for a small party or a larger wheel for a big gathering!. It should be timed so that it comes out of the oven at least two hours before serving but it can keep really well for up to 3 1/2 hours ( for the large)!. But it can be put together ahead of time and refrigerated overnight or even frozen for up to two weeks!.

Baked Brie in Puff Pastry
2 pound wheel of Brie cheese for a large or
1 pound wheel of Brie for a small
2-4 1/2 oz containers of Rondele or Boursin cheese for large or
1-4 1/2 oz container of Rondele or Boursin cheese for small
2 TBS whipping cream for large or
1 TBS whipping cream for small
1-1 pound package frozen puff pastry for large (2 sheets) or
1/2 -1 pound package frozen puff pastry for small (one sheet)
1 egg beaten with 1 TBS water for egg wash

In a small bowl mix whipping cream and Rondele or Boursin cheese!. Spread on top of brie, covering evenly!.
Roll out 1 sheet of puff pastry on a lightly flowered board into a 14 inch square!. Place brie in center!. Trim pastry into a circle 2 inches larger than the cheese!. Brush edges of pastry with egg wash!. Press Dough up around sides of brie using the egg wash as glue!. Cover entire sides of the cheese!. Roll out second of pastry!. Brush with egg wash!. Turn brie upside down on center of pastry!. Cut a circle 2 inches larger than the cheese!. Repeat covering sides of the brie with the pastry and using egg wash as glue covering sides with a double thickness of pastry!. Turn pastry wrapped brie right side up!. Reroll scraps of pastry and use to cut out decorations!. Glue pastry decorations on top with egg wash!.
If making the small baked brie, use one sheet to cover entire wheel of brie, top, sides, and bottom!.
May be refrigerated overnight
May be frozen for up to 2 weeks

Before serving, bring to room temperature!. Preheat oven to 400 degrees!. Place on ungreased baking sheet and bake 35 to 45 minutes for large, 20 to 25 minutes for small or until pastry is golden brown!. Let rest for at least two hours at room temperature or the cheese will be too soft to cut!. Serve cut into wedges or spread on crackers!. Large serves 16 to 20!. Small serves 8 to 10!.

I like to spread sauteed mushrooms or a few tablespoons of brandied cranberries over the top of the brie before encasing it in the pastry!. Or you can split the wheel of brie across the middle and put the mushrooms or cranberries in the middle of the cheese!.

Brandied Cranberries

1 12 oz bag fresh or frozen cranberries
1 1/2 cups sugar
1/2 cup brandy
2 TBS !.orange zest

Preheat oven to 350 degrees!. Mix all ingredients in an 8x8 or 9x9 inch pan!. Bake, stirring occasionally, until the liquid is evaporated and the crenberries are thickened!.
