Question: Can you help me with my Christmas Dinner!?
I am going to be having Christmas at my home this year for the first time!. My mother usually has it for the whole family, but as she gets older it is just too much for her so I have decided to have it this year!. It will be the first time that I have cooked a large dinner like this!. There will be about 25 people!. I know that I am going to serve ham, but I need help with the side dishes!. I don't want just plain corn and peas, that's fine but I want some new things too!. Do you have any suggestions or what type of things do you have for your christmas dinner!?Www@FoodAQ@Com

Free Flow Drinks

Mint Lemonade

Ingredient A
Large bunch mint
2 lemons (juiced)

Preparation
a!. Wash and pick mint leaves!.
b!. Crush slightly and place in bowl,
with the lemon juice!.
c!. Let it stand for 2 hours!.

Ingredient B
1000 ml water
220g sugar
2 oranges (juiced)
250 ml pineapple juice

Action
a!. Boil sugar and water for 10 minutes!.
b!. Pour the boiling hot sugar water,
over the mint mixture!.
c!. Let it cool, and strain!.
d!. Add orange, pineapple juices,
and more water when necessary!.
e!. Serve in glass with crushed ice,
and a sprig of mint in each glass!.

or

Sago Fruit Soup

Ingredients
250 ml strawberry juice
250 ml pineapple juice
1 tablespoon lemon juice
1 tablespoon sago
1 tablespoon sugar
Chipped ice

Action
a!. Cook the sago with the strawberry juice!.
b!. Add the rest of the juices and sugar!.
c!. Cool and serve in sherbet cups,
with ice!.



Serving Ham ideas

Baked Ham

Ingredients
1 slice of roasted fresh ham
2 baked apples

Garnish
1 tablespoonful meringue
1 browned sweet potato

Action
a!. Drop meringue on each apple and put,
in a 200°C (392°F) oven for a few minutes,
to brown!.

b!. Arrange this on the platter,
around the nicely browned roast!.

c!. Browned sweet potato may also be arranged,
just inside the apples!.


Baked Apples
2 large green apples (cored)
1 teaspoon Brown sugar
1 teaspoon Cinnamon
1/2 teaspoon butter
80 ml hot water

Action
a!. Preheat 180°C (356°F) oven,
for 10 minutes!.

b!. Put 1/2 of the sugar, cinnamon,
and butter on top of each apple!.

c!. Place the apples in the baking pan!.

d!. Pour hot water into the pan,
and set in the bottom of the oven!.

e!. Bake for about 1/2 hour!.

f!. Stick a fork into them, and try them!.
When they are done, they are juicy and soft!.

g!. Put them in a pretty plate with all the syrup,
that has been cooked out of them!.



Dessert

Chocolate Coffee

Ingredients
125g non sweeten chocolate
100g granulated sugar
Water
125 ml clear coffee
Whipped cream

Action
a!. Boil chocolate, sugar and water together!.
b!. Add the coffee, and top with whipped cream!.

Amazing Christmas Pudding

Ingredients A
12 lady fingers
125 ml sherry wine

Preparation
a!. Divide the lady fingers and put in a pudding dish!.
b!. Soak them in sherry wine!.

Ingredients B
1000 ml milk
220g sugar
2 tablespoons corn flour
2 tablespoons corn starch
4 eggs (well beaten)
20g butter
Vanilla

Preparation
a!. Add sugar, flour, starch, eggs and butter into the milk!.
b!. Mix well, and flavor with vanilla!.
c!. Cook over slow fire!.
d!. Keep stirring and boil to a smooth custard!.
e!. Let it cool!.

Ingredients C
2 egg whites
2 tablespoons sugar
Chopped nuts

Action
a!. Pour Mixture B over the lady fingers!.
b!. Lastly, beat the 2 egg whites and add 2 tablespoons of sugar!.
c!. Spread over the top and cover that with chopped nuts!.

Grapefruit Salad

Ingredients
1 large grape fruit
2 large sweet apples
French dressing
Lettuce cups
White grapes (skinned and seed removed)
Chopped nuts

Action
a!. Remove pulp from the grape fruit in small pieces!.
b!. Pare, core and chop the apples!.
c!. Put grape fruit and apples together, and mix with dressing!.
d!. Chill on ice!.
e!. Serve in lettuce cups and garnish with grapes and nuts!.


Extra
Chocolate Specials

Ingredients
100g stoned stewed prunes
100g chopped pecan-nut meats
100g preserved cherries
1 teaspoon vanilla extract
Melted Chocolate
Confectioner's sugar

Action
a!. Put the prunes, nut meats, and cherries,
through a chopper!.

b!. Into this mixture work confectioner's sugar,
until a stiff paste has been formed,
then add the vanilla extract!.

c!. Cut into small blocks and set away,
in a cool place to harden!.

d!. Dip into melted chocolate and drop,
on a tin sheet!.

I like to do a roast pork too- with yummy crackling and baked apples!.
Roast veggies are always good too- potato, pumpkin, carrots, onion, sweet potato roasted with a few herbs and spices is always delicious
If you don't like roast veggies- nice fluffy creamy mash potatoes are always good- or garlic mash potatoes

we always have mashed carrots and turnips mixed for every holiday dinner!. sauteed green beans with bacon is good also!. steamed brocolli with cheese sauce!. for the starches i like twice-baked potatoes or scalloped potatoes and baked macaroni and cheese!.Www@FoodAQ@Com

If you are having ham, it might be a nice idea to have scalloped potatoes, green beans, and pineapple salad!. Fresh rolls would be welcome, too!. You may also serve a favourite dessert afterward!.

Pineapple Carrot Salad

Ingredients:
1 envelope unflavored gelatin
1/2 cup reserved pineapple juice
1/3 cup sugar
1/4 tsp!. salt
1 cup boiling water
1/4 cup lemon juice
1/2 cup chopped pecans
8-oz!. can crushed pineapple, well drained, reserving juice
2 carrots, coarsely grated

Preparation:

In large bowl, sprinkle gelatin over reserved pineapple juice and let stand 2-3 minutes!. Then pour sugar and salt on top of gelatin!. Pour boiling water over all and stir until sugar and gelatin are dissolved!. Add lemon juice and stir to blend!. Add pecans, pineapple, and grated carrot!. Pour into 8" square glass baking dish!. Cover and chill 4 hours until firm!. Cut into squares to serve on lettuce cups!.Www@FoodAQ@Com
