Question: What can i have for my dinner today!?
I always find it a big headache thinking of meals to make!. I am on a low budget so some less expensive suggestions appreciated!. I like alsorts of things and just can't make a meal!.

Dining on a budget can be a challenge! Here are some ideas:

1!. Baked potato topped with your favorite canned chili, grated cheese, and chopped onion!.
2!. Seasoned ground beef in a cheesy cream sauce over pasta, with sliced tomatos and cucumbers!.
3!. Chicken thighs, cooked in a nonstick pan, with Stovetop dressing, gravey and green beans!.
4!. Spaghetti with premade marinara sauce, green salad
5!. Stuffed burgers (with provolone and diced green chili's) on whole grain english muffins, topped with lettuce, sliced tomatos, cheese, and with chips, olives, pickles!.
6!. Porkchops baked with Campbells Cream of Mushroom soup and french fried onions with fresh applesauce, mashed potatos and glazed carrots!.
7!. Flank steak, grilled and sliced thin, with barbecue sauce, corn on the cob, green salad
8!. Roasted chicken, sweet potatos with brown sugar and marshmallows, fresh spinach salad
9!. Fish sticks topped with American Cheese and served with tarter sauce, oven baked fries, sliced tomatos!.
10!. Steamed or grilled hot dogs, macaroni and cheese (add extra cheese, a little yellow mustard and grilled onions if desired), green beans!.

Beef Stew with Red Wine and Artichokes
Cut 2 pounds of beef round into 1" pieces and shake in a bag with 4 Tbs flour!.

Brown on medium high heat in 2 Tbs oil!. Meanwhile prepare:
* 1 large onion, cut in 1/8s
* 4 large cloves of garlic, diced or pressed
* 1 carrot, peeled and diced
* 2 celery stalks, diced

Remove the meat when it's browned all over (about 10 minutes) and brown the onions and garlic about 8 minutes!. Remove them and brown the carrots and celery about 8 minutes!. Return the beef and onions and garlic back into the pot!. Add:

* 1 cup red wine
* 2 cups beef broth
* 1 small can of V8 juice
* 1 cup of tomato juice

Stir and scrape to get all the good browned bits off the bottom of the pan, then simmer for an hour to an hour and a half!. Add:

* 1 more cup of red wine
* 1 can drained artichoke hearts, cutting into 1/8s if not already cut
* 1 potato, peeled and diced
* 1 cup peas (frozen is fine)
* a handful of asparagus tips (I didn't have any and left them out)
1 tsp oregano
1 tsp thyme
salt and pepper to taste

Simmer another hour and a half or so, until the meat is very tender!.

Cheeseburger Soup
This is definitely hearty enough to be a meal!.

1/2-1 pound of ground beef (depending on how filling you want it to be!)
1 onion, diced
2 carrots, diced
2 stalks celery, diced
2 cloves garlic, minced
8 ounces mushrooms, cleaned and sliced (optional)

3-4 cups chicken or beef broth
2-3 potatoes, peeled and diced
1 tsp dried basil
1 tsp dried parsley
salt and pepper to taste

2 Tbs butter
1/4 cup flour
1 1/2 cups milk

8 ounces American cheese, cubed

1/4 cup sour cream (optional)

Brown the ground beef!. Add the onion and cook until soft!. Drain any fat off!. Add the carrots, celery, and garlic and cook about 5-10 minutes, then add the broth, potatoes, and seasonings!. Bring to a simmer, cover, and cook 20 minutes or so!. Timing's not essential as long as the vegetables are cooked!

Make a white sauce!. Melt the butter, slowly add the flour, stirring constantly and cook 2 minutes over medium low heat!. Slowly whisk in the milk, stirring constantly!. Turn the heat up and simmer a few minutes until thick!. Stir into the soup!. Add the cheese and stir until melted!. Just before serving, stir in the sour cream if using!.

Goes great with biscuits or crackers!


Olio e Aglio Pasta
(Angel Hair with Oil and Garlic)
This is a great easy side dish!. Some people anchovy paste to it but we like it plain!.

8 ounces angel hair pasta
1/4 olive oil
2 -3 large cloves of garlic, minced
Grated Parmesan cheese

Boil the water for the pasta and heat the oil in a small pan!. When the water boils and you add your pasta, stir it quickly so it doesn't stick!.

Add the minced garlic to the oil!. Do not overheat or the garlic will taste bad!. You just want it softened and warmed!.

Drain the pasta!. Mix with the oil and garlic and top with grated Parmesan cheese!.

Pasta and Ricotta Cheese
A kid-favorite that's much easier than macaroni and cheese!

1 cup ancini di pepe pasta (or other small pasta)
2 tsp butter
1/2 cup ricotta cheese

Cook the pasta in boiling salted water until done, about 9 minutes!. Drain but reserve a bit of the water in case the pasta is too dry at the end!. Mix the pasta with the butter and ricotta!. If it's too dry, add a bit of the hot pasta water to moisten!.
