You can buy a whole chicken for 2 for about $3.50. Lemons are cheap. I roasted a whole chicken with lemons stuffed inside it and butter and salt and pepper on the outside. It was delish. I also made a pasta salad (cheap) and green beans(REALLY cheap). Then I made fudge sundaes for dessert. If you buy just the pint of vanilla ice cream, a little jar of fudge sauce, some whip cream in a can (good for later too ;) ), and some roasted peanuts(gas station for a quarter) The whole meal costs me about 15-20 bucks.
Make it cheap but nice or borrow some money from your parents or friends. that is what i did and we had a great time!
Chicken breasts stuffed with cheese and mushrooms.
Rice Pilaf.
Steamed asparagus.
Ice cream.
Check out the Food Network for simple - Yet elegant and sophistacated recipes. Hope you have a good time!
pumpkin soup! with crusty garlic and herb bread (its very cheap to make)
chicken stir fry
choc mousse
I would suggest doing salad and maybe a cheese soup as your first course, then for the main dish serve chicken piccata, its a great dish that is simple to make but looks great, and doing a cheesecake for desert.
Suggest you go to allrecipes.com you can put in just the meat you want; or you can search by what ingredients you have. I use this site all the time. It's great. If he likes chinese, then do a simple salad with chinese noodles; chicken stir fry; and for dessert something 'light' like sherbert.
Cesar salad with pasta and grilled chicken strips. (For the price of one meal you have a first and second course)
You can buy the grilled chicken strips already done. Just throw them in a pan and heat them up for a few minutes, and they are not exspensive.
For a few bucks you can buy salad kits with everything you need. And rigatoni pasta noodles are really cheap.
For dessert you can buy a cake mix and make cup cakes or a layer cake. They are also not to exspensive.
Go to Walmart get one of those salads in a bag with all the ingredients you need. If he loves chicken you can get a lemon pepper chicken already done. Go to the frozen vegetable section and get the stir fry vegetables. You never go wrong with rice. I normally use the pre-cooked rice and add seasoning with butter. Go to the dessert section at Walmart and just pick out what looks good and is inexpensive.
This is easy and good.
Parmesan-Crusted Chicken in Cream Sauce
2 cups MINUTE Brown Rice, uncooked
1 can (14 oz.) fat-free reduced-sodium chicken broth, divided
6 RITZ Crackers, finely crushed
2 Tbsp. KRAFT 100% Grated Parmesan Cheese
4 small boneless skinless chicken breast halves (1 lb.)
2 tsp. oil
1/3 cup PHILADELPHIA Chive & Onion Light Cream Cheese Spread
3/4 lb. asparagus spears, trimmed, steamed
COOK rice as directed on package, using 1-1/4 cups of the broth and 1/2 cup water.
MEANWHILE, mix cracker crumbs and Parmesan cheese on plate. Rinse chicken with cold water; gently shake off excess water. Dip chicken in crumb mixture, turning over to evenly coat both sides of each chicken breast with the crumb mixture.
HEAT oil in large nonstick skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until golden brown on both sides and cooked through (170°F). Place chicken on serving plate; cover to keep warm. Add remaining 1/2 cup broth and the cream cheese spread to same skillet. Cook on medium heat until mixture just comes to boil, stirring constantly. Simmer 3 min. or until sauce is thickened, stirring frequently. Spoon sauce over chicken. Serve with the rice and asparagus.
lmao@my money is low
1st course - Green salad and soup (pick a variety of Campbell's)
2nd course - Take a couple of chicken breasts, pound them out evenly, bread them with bread crumbs mixed with his favorite seasoning spices, and bake or pan-fry them, then serve over spaghetti with marinara sauce.
3rd course - My first pick would be to get the creme brulee mixes but not everyone has a torch and rammekins. Second idea: jello pudding layered in champagne glasses with coolwhip and fresh fruit. Maybe a small bag of frozen strawberries with chocolate pudding and whipped cream?
Best of luck!
I would do either a pecan crusted chicken or the famous
engagement chicken (it's suppose to help you get engaged)
