I am looking for some new lunch menu ideas for my restaurant?!

Question: I am looking for some new lunch menu ideas for my restaurant!?
I have a tex mex restaurant and I am looking for some lunch items to lighten the menu!. Other than taco salad and soups!. I would like the items to be easily prepared, and made in advance, so all I have to do is put the ingredients together!. It is a quick service restaurant and all food items take no longer than 2 minutes to assembleWww@FoodAQ@Com

I live in New Mexico!. Many of our mexican resturants have avocado salad, guacamole with a garnish of lettuce and tomato; and black bean and corn relish on grilled chicken!. That would come with rice!. I have to stop!. I'm getting hungry!. Cilantro and limes add tons of flavor!. Maybe you could have some lighter versions of local favorites!.Www@FoodAQ@Com

A variety of quesadillas would be quick and tasty!. Maybe seafood or veggie, or some other variety!.Www@FoodAQ@Com
