Easy Taco Salad (My fiance's Grandmother's tradition)
Brown/Drain 1 or 2 lbs ground beef!. (1lb serves 4 people)
Per 1lb Beef: Add a tbsp each of Cumino, Garlic Powder, Onion Powder, and Chili Powder!. Add a dash of salt to taste!. Add 1/4 cup water!. Add 8oz cubed Velveeta, 1 small diced white onion, 1 diced green bell pepper, and simmer until cheese is melted!. Layer Fritos, chopped iceberg lettuce, and meat mixture!. If entertaining Xmas Eve, for breakfast or lunch, I make a Strata with ham, cheese, spinache filling and serve with salad - easy to make the Strata ahead of time and just bung into the oven!.
This strata is great for a group at brunch, lunch or supper!. You can assemble it a day ahead, so it's perfect for busy times!.
Servings: 8
1 loaf sourdough bread
1 pkg (10 oz/300 g) frozen spinach, thawed and squeezed dry
6 green onions, thinly sliced
1-1/2 cups (375 mL) shredded swiss cheese
1 cup (250 mL) diced ham or smoked turkey
8 eggs
2-1/2 cups (625 mL) milk
1 tbsp (15 mL) dijon mustard
1/4 tsp (1 mL) each salt and pepper
Preparation:
Cut bread into 1-inch (2!.5 cm) cubes to make about 12 cups (3 L)!. In large bowl, stir together bread, spinach, onions, cheese and ham!. Spoon into greased 13- x 9-inch (3 L) glass baking dish!.
In bowl, whisk together eggs, milk, mustard, salt and pepper; pour over bread mixture and let stand for 20 minutes!. (Make-ahead: Cover and refrigerate for up to 24 hours!.)

Ussually on Christmas Eve, my family will either order out like Chinese Food!. But we ussually have our nice dinner on Christmas Day!. My mother makes these checkin wings that are really good with pinaple!. She'l probably make some ham and sandwhiches and just a variety of things!. i ussually have alot of people over so we dont all sit at the talbe!. we split up into different rooms and hang out!.Www@FoodAQ@Com
We always cook a big pot of chili for Christmas eve with cornbread!. Christmas morning: banana pancakes!!! I cook the pancakes while the kids are busy playing with all their new goodies, working up an appetite!. I grew up on a farm!. On Christmas, Mommy would roast a big turkey and usually cook yams, mashed potatoes and green beans!. For dessert, we had mince or pecan pie!. On Christmas Eve, we usually killed a chicken and ate it with various vegetables!. In winter, we didn't have fresh ones from our garden, but we got some at the store!.
