Mirapoix is a combination of carrot, onion, and celery that is cooked together to form the basis of a sauce or an accompaniment to the main dish.

it is a french cooking term for diced veggies : celery onion and carrot.

a basic mirepoix is 2 parts onion to 1 part celery and 1 part carrots If you use more than that amount of carrots it will discolor your recipe. Veggies should be medium to small dice.

There is Cajun Trinity, an onion, celery, green pepper mirepoix.

Matignon starts with the basic mirepoix and adds uniformly diced ham, sometimes mushrooms and herbs/spices appropriate for the dish.
