Help with suffed peppers?

I'm having a friend over for dinner and i wanted to make Roasted peppers with veggie rice but i'm worried the rice will dry out in the oven, any suggestions?

When I make stuffed peppers, I make sure that I cut the top (i.e. the stalk part) off the pepper, empty all the seeds, add the rice then put the top of the pepper, with the stalk back on. The flavour from the pepper absorbs into the rice and makes it moist and you still get the delicious oven roasted taste that you miss out on by wrapping it in foil.
It looks lovely when you serve it like that too.

dice some mushrooms and onions to the rice and i little olive oil, this will keep it moist.

when i do my stuffed peppers i use the microwave. i cover mine with a tight fitting lid. they come out soft,and the rice is not dry. i bet if you try that with your peppers you will love it.

I don't think the rice dries out unless you overcook either the rice before hand or the peppers. When you cook the peppers there is moisture from the peppers that soaks into the rice or other ingredients in the rice that stop it from doing so like chickpeas.
The rice never really gets dried out but it is more dried than rdinary plain boiled rice.

just brown some onion's and peppers remove from pan make rice a roni then add veggies simmer and then stir (or just add a can of chicken broth when baking)

Place wet paper towels over them and then cover with foil.

cover them with foil...............use red peppers, they're sweeter

first roast the peppers for about 10-15 min, fill them with the rice and veg already cook (add a few raisings to it,previously boiled in water) and put grated cheese on top(that will stop it from getting dry.ENJOY

Try suffing them with stuffed peppers...........
