Cucumber Mint Tea Sandwiches

1/2 seedless cucumber, peeled and very thinly sliced (about 32 slices)
1/4 cup loosely packed fresh mint leaves, rinsed, spun dry, finely chopped
1/4 cup unsalted butter, room temperature
1/4 cup cream cheese, room temperature
16 slices best-quality white bread (or whole wheat)
salt

Place cucumber slices between layers of paper towels to remove excess moisture.
In a small bowl, combine the mint, butter, and cream cheese; spread on one side of each slice of bread. Lay the cucumber slices onto the buttered side of 8 slices of bread. Sprinkle with salt. Top with the remaining slices of bread, buttered side down.
Gently cut the crusts from each sandwich with a sharp knife. Cut the sandwiches in half diagonally and then cut in half again.
Makes 8 whole sandwiches, or 16 halves, or 32 fourths.

Egg and Cress Tea Sandwiches

6 hard-boiled eggs, peeled
1/3-1/2 cup mayonnaise (best quality or homemade)
salt and pepper, to taste
Tabasco sauce, to taste
2 bunches watercress, washed, stems removed
1/4 cup finely chopped fresh chives
16 slices very fresh bread (use firm white or wholemeal bread, sliced very thin)
1/4 cup chopped fresh parsley

Remove the crusts from the bread.
Chop the eggs, and gently mix in a bowl with the chopped watercress and chives. Add just enough mayonnaise to moisten and bind the mixture the mayonnaise. Season to taste with salt, pepper and Tabasco, and gently mix well.
Spread half of the slices of bread with the egg and watercress mixture, and place the remaining slices of bread on top.
Lightly spread the outside edge of each sandwich with mayonnaise and dip into the chopped parsley.
Cut each sandwich into 4 triangles.
To serve, arrange the sandwiches on a platter, and garnish with the remaining watercress.

Makes 32 triangles

Carrot "Cake" Tea Sandwiches

1 loaf cinnamon raisin bread
8 ounces cream cheese frosting (1/2 can)
8 ounces softened cream cheese
1 cup grated carrots
1/4 cup walnuts or pecans


Trim crusts off of bread.
Combine frosting, cream cheese, carrot and nuts.
Spread filling evenly on bread, top with another slice of trimmed bread to create sandwiches.
Slice sandwiches into quarters, and be creative with the shapes, long fingers, squares, triangles, or use cookie cutters to create other fun shapes.
Chill for at least an hour before serving.

40 finger sandwiches

You can try a club sandwich

2oz turkey
2oz ham
1oz cheese
2-3 leaves of lettuce
3 slices of toast
Mayonnaise

On one side of a toasted piece of bread spread some mayonnaise,put a layer of ham,put another piece of toast on top and add some mayo to the top of it, put a slice of turkey,put lettuce on it,add more ham and some cheese add more lettuce and on the last piece of toast add more mayo and remaining Lettuce top off sandwich and cut into quarters

Traditionally, cucumber and watercress. Lightly butter bread, light mayo (if desired), thin slices of cucumber (English cukes, seedless) and small bit of watercress. If you can't find watercress, a bit of alfalfa or radish sprouts will work.

Or egg salad. Hardboiled eggs and Mayo with a touch of mustard. Again with lightly buttered bread.

The butter keeps the bread from getting soggy so they can be prepared in advance and kept cool.

Cucumber Tea Sandwich

1 large cucumber, peeled and sliced very thinly
Salt
3/4 cup soft butter
2 teaspoons minced fresh garlic
20 slices bread
1 tablespoon lemon juice
1 tablespoon olive oil
Pepper to taste

Lightly salt the cucumber slices and place them in a colander to drain for 1 to 2 hours. Then combine the butter and garlic and apply to 1 side of each slice of bread. In a small bowl, stir together the lemon juice, olive oil, and pepper. Add the cucumber slices, coating them well. Arrange the cucumber on 10 of the bread slices, top with the other 10 slices, remove the crusts, and quarter. Serve immediately. Makes 40 tea sandwiches.

A really easy one (and pretty):

Mix cream cheese with chopped maraschino cherries (as many as you like (I tend to add more)... and add a bit of the juice. Gives you a pretty pink color. If you're rolling pinwheels...place a cherry in the middle of the roll.

Deviled Egg salad!
Hard boil eggs.
Shell, dice. Mix with Coleman's dry mustard, some mayonnaise, and salt & pepper to taste! Maybe a dab of Tabasco.
Spread on dark rye bread, add a bit of butter lettuce.
Yum!!!!!!!!!!!

VERY EASY RECIPE...

Peel and then slice english cucumbers very thin. Mix cream cheese with fresh chopped dill. Buy crustless bread, spread a thin layer of the cream cheese mixture on both slices of bread, layer w/cucumbers, cut in half or in fourths.

I've used this recipe 2x and received many compliments!

Popular in Japan, just take cool whip (Whip Cream) on one slice of bread and you favorite Jelly or Jam on the other.
