Want veg goes with lasagna?

My mum often makes lasagna for special occasions (when people come round for dinner etc).

My mum always gets some baby beans, cuts up some carrots diagonally, cuts up florets of brocolli and sometimes boils some broad beans.

She boils the vegetables until tender. My mum sometimes cooks the carrots separately, drains the water the carrots were boiled in and then gets some honey and tosses them in it (pour just enough honey so they are coated..not drenched).

These vegetables compliment the meat or vegetarian (with spinach and ricotta filling, homemade tomato sauce and lasagna sheets with cheese) lasagna really nicely. My mum also bakes whole potatoes (small to medium sized) or makes up a potato bake.

Potato Bake recipe

8 medium to large potatoes
1 large sweet potato (optional)
1 to 2 onions
Milk or cream (just enough to coat/pour over half way up the baking dish)
Seasoning (pepper and salt)
1/2 Tablespoon of oil

Herbs
rosemary
Thyme

Method:
Peel the potatoes and sweet potato. Cut the potatoes in rounds about 4 to 5mm thick (1/2 cm)(the thicker the potato rounds..the longer they will take to cook).
Cut the onion in half and then chop across so you end up with semi-circle pieces (cut about3 to 4mm thick).
Layer the potato, sweet potato and onion in a baking dish (suitable for the oven!)
Scatter the thyme and rosemary (as little pieces..doesn't have to be finely chopped) amongst the potatoes.

Mix the milk and or cream with the oil, season with salt and pepper and pour evenly over the layered vegetables so that it (liquid) comes half way up the sides of the dish. Cover (lid etc)and put in the oven at 180 degrees celcius for about an hour or until the potato is tender and slightly crisped on top).

I'd probably serve it with a green salad.

Or you could use baked vegetables - pumpkin, carrot, eggplant

Steamed Spinanch or sautee it with Garlic and Olive Oil and Serve Lasagne over the spinach. Yum!

What vegetables don't? I like to serve a green vegetable just because it is a nice contrast....spinach, kale, broccoli, green beans, but I don't think that there is any guideline against serving a specific veggie.

Usually a salad. The darker the greens, the better. Iceberg is almost worthless.

A spinach salad would go nicely. Also, serve some garlic bread (I know that's not a veg, but still it should be served with lasagna).

I use escarole, sauteed in olive oil, garlic.

I'd probably just go with the salad though.

Salad with italian dressing, make sure you put in the croutons and olives. I put diced tomoatoes and mushrooms in my lasagna. I make my own sauce and add them in. If you use a jar of sauce, you could also substitute some of the sauce with a can of diced tomatoes in juice, or drain the tomatoes and just add to the sauce (that's probably easiest).

Toss salad,broccoli,asparagus. Any that's green or yellow.
