In fine dining service do you set with your right and clear with your left?

In fine dining service do you serve the entree using your right hand coming from behind the guest from thier right and do you clear with your left hand coming from behing the guest on thier left or is it the other way around?

"When serving guests at a sit down dinner, the food is served on the left side. It is removed from the right. A way to remember it is "LL/RR"' which means "leave it at the left, remove it from the right."
The universal sign to a server that a diner is finished, is the placement of the used silverware. Visualizing the plate as a "clock", the knife and fork are placed parallel between 3 [o'clock] and 6 o'clock. I like to teach "10 to 4 [o'clock].) The handles of the silverware are at the 4. This not only indicates to the server that one is finished, it also makes it easier for the server to remove the plate from the right side.
Beverages are served on the right side of the diner. Beverages are to the right of one's place setting, hence it is safer for the server to pour beverages closer to the glass/cup.

The general etiquette rule for serving seated guests is to both serve and remove the plate from the right.

The only time you serve on the left is if you're serving a side dish (bread, etc), because these items are placed on the left side. Platters of food are also served on the left when the guest or host must serve themselves.
