Make something you can share like a seafood platter with shrimp, lobster, and oysters for dinner and chocolate fondue for dessert.

No man can resist a whole, roasted chicken. Toss some quartered new potatoes and baby carrots in the oven w/ the chicken (separate dish) or boil some potatoes and season them up. Serve w/ fresh French bread and maybe a green salad. Make his favorite dessert (chocolate, strawberry, fruit something, ice cream, whatever it is he likes).

Perfect Roast Chicken

1 (5 to 6 pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons (1/4 stick) butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges
Olive oil

Preheat the oven to 425 degrees F.
Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.

Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

LEMON-BUTTERED NEW POTATOES

8 to 12 small new potatoes (about 1? pounds)
1/3 cup butter or margarine
2 Tbsp. chopped fresh parsley
1 tsp. grated lemon rind
3 Tbsp. fresh lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. ground nutmeg

Peel a narrow strip around center of each potato.

Cook potatoes in boiling salted water to cover 15 minutes or until tender; drain and keep warm.

Melt butter in a medium saucepan over medium heat; add parsley and next 5 ingredients, and cook, stirring often, until thoroughly heated. Drizzle over potatoes, and serve immediately.

Roasted Potatoes with Onion, Bacon, and Thyme
Serves 4

This preparation is superb with potatoes, but it works nicely with other root vegetables as well.

5 slices of bacon
1 medium head of garlic
1 1/2 pounds all-purpose potatoes peeled and cut into 1 1/4-inch pieces
1 medium onion
2 tablespoons dried thyme , crumbled
table salt
ground black pepper


1. Heat oven to 400 degrees. Cook 5 slices of bacon (1/4 pound) in a roasting pan over medium-high heat or in a 400 degree oven until crisp. Remove bacon, crumble and set aside. Leave about 2 tablespoons of bacon fat in roasting pan.

2. If roasting garlic cloves in skins, simply break head into individual cloves. If you wish to roast cloves out of skins, put whole, unpeeled head in a small saucepan with water to cover. Bring water to boil, then simmer to soften cloves and loosen skins, about 10 minutes. Drain and refresh garlic head under cold water. Separate cloves and peel.

3. Put vegetables (excluding garlic) into a roasting pan large enough to hold them without crowding. Toss vegetables with bacon fat from roasting pan, dried crumbled thyme and sprinkle with salt. Roast, stirring or shaking vegetables every 15 minutes, until tender and evenly browned, 45 to 50 minutes. Add unpeeled garlic cloves during final 20 minutes; add peeled garlic during final 15 minutes. Sprinkle with pepper; taste and adjust seasonings. Garnish with crumbled bacon and serve hot or at room temperature.

Can't go wrong with Italian....lasagna , chicken tetrazinni, fettucine alfredo,.... have a nice salad, some crusty French bread, and something sinfully rich for dessert . Oh, and don't forget that nice bottle of red wine. Hearty chianti or the more mellow merlot.

broil steak in the broiler then top with mushrooms once you know it's cooked broil for a few then top that with alfredo, sound gross but it's the BEST! and if he hastes mushrooms try shrimp!

side frech style green beans steamed, and red wine yum! grr baby, remember mushrooms are an alphrodesac (forgot spells sorry there), basically add some candle light he wont forgot

For a man, if you serve it wearing your hottest little black dress, then that's as romantic as it gets! (especially if there's candle-light!)

However, if you're still wondering what to serve, how about this:
For starters: smoked or marinated salmon on a bed of butter lettuce, with a light tarragon or balsamic vinaigrette and some mandarin orange sections.
For the main dish: fettucine alfredo with either grilled shrimps or grilled chicken, and add some asparagus spears (lightly steamed in 2-3 inch pieces) tossed in at the last moment. Garnish plates with a couple tiny cherry tomatoes.
Don't forget some fresh bread on the table...like a baguette or rolls, whatever you like...if you want, warm it up a bit and have a small dish with olive oil & balsamic vinegar swirled in it to dip the bread.
For dessert, do chocolate. Mousse, or soufflé or lava cakes, even pudding or fudge brownies. Make it special by adding a strawberry split in half and a fresh mint leaf as a decoration.

My husband and I like to get a variety of finger foods - stuffed grape leaves, bread, cheese, grapes, shrimp, nuts, stuffed mushrooms, veggies and dip, etc. We just go to all the specialty parts of the grocery store to find what looks good. Get a nice bottle of wine or a sparkling juice or water if your not drinkers.

Well, first off we can list all kinds of ideas; but you're the only one that knows his tastes. Is he a steak and potato kinda guy? Or does he crave more veggies? A romantic dinner is made romantic not only through ambience, but by the fact that you took the time to cook his absolute favorites. =)

Filet Mignon or Beef Wellington, Truffled Mashed potatoes, Asparagus and a spring mix salad. Don't forget dessert! Chocolate Souffle or Creme Brulee are easy and romantic desserts. good luck.
